Steps:

  • For the marinade and chicken: In a medium bowl, whisk together the gochujang, brown sugar, vinegar and gochugaru. Transfer 1/4 cup of the mixture to a zip-top bag holding the chicken. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 4 hours or up to overnight. Reserve the remaining mixture to make the gochujang glaze (refrigerate if the chicken is marinating overnight).
  • In a large Dutch oven, heat the oil until a deep-frying thermometer registers 350 degrees F.
  • In a pie dish or shallow bowl, whisk together the eggs and buttermilk. In a separate pie dish or shallow bowl, whisk together the cornstarch and self-rising flour. Mix 3 tablespoons of the buttermilk-egg mixture into the flour mixture; lightly whisk to work the buttermilk into the dredge to create little crispy, craggily bits.
  • Remove the chicken from the marinade and discard the marinade. Dunk the chicken first in the buttermilk-egg mixture, then dredge in the flour mixture to coat thoroughly. Working in batches if necessary, gently drop the chicken into the oil. Cook until the internal temperature of the chicken is 160 degrees F, 8 to 10 minutes. (With the carryover time, it should go up to 165 degrees F.)
  • For the ginger mayo: Whisk the mayo, ginger, soy sauce and vinegar together.
  • To serve: In a small saucepan, melt the butter over medium heat. Whisk the butter into the bowl of the reserved marinade until smooth.
  • Spread each bun top with the ginger mayo. Top with some kimchi.
  • Toss the chicken in the glaze and place on the bun bottoms. Sprinkle the chicken with sesame seeds. Close the sandwiches.

6 tablespoons gochujang (Korean chile paste)
1/4 cup dark brown sugar
3 tablespoons rice wine vinegar
1 teaspoon gochugaru (Korean chile flakes)
4 boneless, skinless chicken breasts
About 48 ounces vegetable oil, for frying
2 large eggs
1 cup buttermilk
1 1/2 cups cornstarch
1/2 cup self-rising flour
1/2 cup mayonnaise
1 teaspoon finely grated fresh ginger
1 teaspoon soy sauce
1 teaspoon rice wine vinegar
1/2 cup (1 stick) unsalted butter

Steps:

  • Cut loaf of bread in half lengthwise. Top the bottom bread slice with the Teleme cheese, then the smoked ham, distributing it evenly. Place top of bread on sandwich and brush with butter.
  • Heat a sandwich grill until hot. Set sandwich, butter side down in grill. Butter top side of bread. Place a heavy pan on top of entire sandwich to evenly distribute weight and cook until nicely browned and the cheese is melted, turning once, 3 to 4 minutes on each side.
  • Transfer the sandwich to a work surface and remove the top slice of bread. Spread the underside of the bread with mustard, and add roasted peppers, if desired.
  • Replace the top slice of bread, cut the sandwiches into slices, and serve immediately.

1 loaf Italian bread such as ciabatta
1 pound Teleme or Brie cheese
1 pound sliced smoked ham (applewood if available)
Butter
3 to 4 tablespoons Dijon mustard
1 cup roasted red peppers

Steps:

  • Mix Gruyère, white cheddar, fontina cheese, garlic, parsley, gochujang, mayonnaise, and onion in a medium bowl until well combined.
  • Heat a large cast-iron or non-stick skillet over medium-high. Fry pancetta until crispy and fat has rendered, 3-5 minutes per side. Wipe out skillet and reserve for sandwiches.
  • Spread 1 side of each slice of bread with 2 Tbsp. mayonnaise total (doing this before toasting helps ensure a golden brown and crispy grilled cheese). Flip 2 slices over so mayo side is face down. Divide cheese spread between these 2 slices. Top each slice with a piece of pancetta, half of sliced okra, half of bean sprouts, and a second slice of bread with the mayo on the outside of the sandwich.
  • Heat reserved skillet over medium-high. Combine oil and butter, stir until butter is melted, and immediately add sandwiches. Cover skillet with a lid or baking sheet to properly melt cheese; toast until bread is crispy and browned, 3-5 minutes per side. Cut sandwiches in half and serve immediately.
  • Cheese spread can be made up to 3 days in advance and refrigerated.

2 ounces grated Gruyère (about 6 tablespoons)
2 ounces grated white cheddar (about 6 tablespoons)
1 ounce grated fontina cheese (about 3 tablespoons)
2 garlic cloves, finely grated
2 tablespoons coarsely chopped fresh parsley
2 tablespoons gochujang (Korean hot pepper paste)
2 tablespoons mayonnaise (preferably Duke's)
1 tablespoon chopped red onion
2 slices pancetta (about 1 ounce)
4 slices good-quality crusty Italian bread, such as ciabatta
2 tablespoons mayonnaise (preferably Duke's)
2 small pickled okra, thinly sliced
1/2 cup fresh bean sprouts
2 tablespoons olive oil
2 tablespoons unsalted butter

GOCHUJANG PORK CUTLET SANDWICHES WITH PURPLE SLAW

I first came across gochujang at an amazing dumpling and bibimbap restaurant in Korea Town in New York City. I loved its smoky-spicy subtle sweetness and wanted to get my hands on it to slather it on anything. I knew pork cutlet and a crunchy, refreshing slaw would pair perfectly with this chile paste! I put a little gochujang in the cutlet coating and more in the sauce, which is really the star of the show here. I've even made sure you have some leftover so you can use it for days to come as a marinade or dressing. Feel free to swap out the pork for chicken. No matter how you enjoy it, I promise your family is going to love this recipe!

Steps:

  • Combine the cabbage with the onion in a large bowl. Season with salt and pepper and toss to combine. Add the lime juice and zest, olive oil, sesame oil, soy sauce, the 1 teaspoon rice vinegar and 1 teaspoon honey and toss to evenly coat. Set aside to let all the flavors infuse.
  • Prepare 3 shallow bowls or pie plates. In the first bowl, whisk together the flour with 1 tablespoon salt. In the second, whisk together the egg with 1 tablespoon water and 1 tablespoon of the gochujang. In the third bowl, stir together the panko and 1/4 cup of the sesame seeds.
  • Place 1 pork chop in between two sheets of plastic wrap or parchment paper and pound with a meat mallet or heavy-bottomed skillet until the pork is 1/4 inch thick. Repeat with the remaining pork chops.
  • Working in an assembly line, dip the pork into the flour mixture, shaking off the excess, then into the egg mixture, and finally, coat in the breadcrumbs, pressing to make sure the pork is thoroughly coated.
  • Add 1/2 inch neutral oil to a large skillet and heat over medium heat until shimmering. Fry the pork until crispy and browned, 2 to 3 minutes per side, moving the pork around to ensure it cooks evenly. Transfer to a wire rack set inside a rimmed baking sheet or paper-towel lined plate and immediately season with salt.
  • Melt the butter in a small saucepan over medium heat. Add the garlic and remaining 1 tablespoon sesame seeds and cook, stirring, until fragrant, 1 to 2 minutes. Remove from the heat and set aside.
  • Whisk together the 2 tablespoons honey with the remaining 1 tablespoon rice vinegar in a small heatproof bowl. Add the 1/4 cup gochujang and whisk until combined. Whisk in the butter mixture until smooth. Measure out 2 tablespoons of this sauce into another small bowl; reserve the rest for another use. Add the mayonnaise to the small bowl and stir together until smooth.
  • Spread the gochujang mayo on both sides of the bread. Fill each sandwich with 1 pork cutlet and some of the purple slaw and serve immediately. Enjoy!

1/4 cup thinly sliced red onion
