EASY APPLE CAKE
After testing many apple cake recipes with fresh apples, this old-fashioned cake is moist, dense and down-home delicious. - Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

SUPER MOIST FRESH APPLE CAKE
This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

Steps:
- Cream together the eggs, oil and sugar.
- In a separate bowl, sift the flour, salt and baking soda.
- Combine all.
- Now add your nuts, vanilla and apples.
- Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
- Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
- In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
- When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.
CHUNKY APPLE CAKE

- In a large bowl, cream the butter, sugar and vanilla. Add eggs, 1 at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff). Stir in apples until well combined., Spread into a greased 13x9-in. baking dish. Bake at 350° for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving., Meanwhile, in a small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from the heat. Serve with cake.

- Preheat the oven to 350°F (175°C). Butter and flour a 10-inch round, 2-inch-deep springform pan and line the bottom with parchment paper. Wrap the outside of the pan with several layers of aluminum foil to prevent leaks. Also line a rimmed baking sheet with aluminum foil.
- In a large bowl with a stand mixer or a hand-held mixer, beat 1 1/2 cups sugar and the butter until very light in color, 3 to 5 minutes. Scrape the bowl as needed with a rubber spatula and continue to beat until the mixture becomes very light in texture, 3 to 4 minutes more.
- Sift together the flours, baking powder, and salt. Alternately add the milk and dry ingredients to the butter mixture, stopping to scrape the bowl as necessary. Add the vanilla and mix the batter just until smooth. Do not overbeat the batter.
