We really enjoy having cheese balls on hand during the holiday season. I created this cheese ball recipe for our new year eve party and was a huge hit. The addition of Knorr Vegetable Soup mix added a nice flavor. I also used this cheese ball as a filling for jalapeno poppers... another great idea.

Steps:
- I use a rolling pin to slightly crush the bag of vegetable soup mix before I open it.
- Mix it up a bit so when you measure it out you will get part of the seasonings and part of the vegetables.
- Mix cream cheese, cheddar cheese, jack cheese, Swiss cheese, soup mix, onion, red pepper, Worcestershire sauce, lime juice and ground red pepper.
- Form cheese mixture into 2 balls and roll in ground almonds (or pecans) and press into ball to coat it well.
- Wrap in plastic wrap and refrigerate overnight to allow flavors to blend.
- This cheese ball will freeze well if desired.
- Flavors are best if served at room temperature.
- Serve with your favorite assortment of crackers.
- This cheese ball makes a great filling for Jalapeno poppers.

SUSIE'S BLEU CHEESE BALL WITH A HOLIDAY PRESENTATION
There are two other very similar recipes posted but I wanted to share my sister's presentation. Even klutz's can do this and it makes it special. I love the simple ingredients and pure cheese flavor. Or use your favorite cheese ball and borrow the presentation.

Steps:
- Mix all ingredients except almonds and form to shape of a pine cone on serving tray.
- (Imagine a pine cone hanging from a branch. Now mentally slice that pine cone in half lengthwise and lay it on your serving tray. That's the shape you want to make.) Starting at the"bottom" of the pine cone lay almonds down flat on cream cheese with narrow end at bottom and wider, rounded end at top.
- Continue with more rows of almonds across the pinecone, slightly overlapping each row on the previous row.
- Remember that branch the pine cone was hanging from?
- Place your piece of evergreen like that.
- Obviously, don't use something poisonous or you can use a piece of silk (artificial) evergreen.
- They make some very attractive ones now.
- Or skip all that, form it into a ball and roll it in chopped pecans.
- Serve at room temperature.

BITS AND PIECES PARTY CHEESE BALL
The cheese ball is a stalwart of the Midwest cocktail party, where it can be fashioned from processed Cheddar cheese and port wine, or pineapple and cream cheese. This recipe relies on the leftover ends of good cheese or even just one kind of good-quality, sharp cheese like Gruyère. The idea of adding butter comes from Vivian Howard, the North Carolina chef who features a cheese ball with blue cheese, chopped dates and bacon in her cookbook "Deep Run Roots." She calls hers a party magnet, and indeed, for all of the shade thrown at cheese balls, they are often the first thing to be eaten. They can be served with chutney, jam or simply alongside the best-quality crackers you can find.

- Allow the butter and cheeses to come to room temperature. They should sit out of the refrigerator for at least 30 minutes.
- Put everything except the pecans and parsley in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth, scraping down the sides of the bowl once or twice. It should take about 4 minutes.
- Plop the mixture onto a piece of waxed paper and gently form into a ball. Place in the refrigerator for at least 15 minutes or until firm enough to work with.
- Mix the pecans and parsley together on a large plate or a cutting board, then roll the cheese ball in the mixture. Cover any surfaces with a sprinkling of the mixture and pat into the sides until you have an evenly coated ball.
- Wrap well in plastic wrap and refrigerate. When ready to serve, let the ball sit out for at least a half hour to soften. Serve with good plain crackers or small toasts.
