Steps:

  • In a large skillet, combine drippings or oil, brown sugar, vinegar, water, salt and pepper. Cook for 2-3 minutes or until hot, stirring occasionally. Add cabbage; cover and cook for 10 minutes over medium-low heat, stirring occasionally. Add apples, cook, uncovered, for about 10 minutes more or until tender, stirring occasionally.

Steps:

  • Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

SWEET COOKED PURPLE CABBAGE RECIPE image

Steps:

  • Split the cabbage in half, remove the tough stem in the center and slice into strips approximately ½ inch/1 cm thick. Peel, core and cube the apple or pear. Transfer the cabbage and the apple/pear to a large pot and add the rest of the ingredients, plus ¼ cup of water. Bring to a boil, stir and cover. Cook on medium heat until all the liquids evaporate and the cabbage is soft. I like to scorch the bottom - by continuing to cook for 2 additional minutes after the liquids evaporate - so that my cabbage gets a little caramelized. Fix seasoning. It should be sweet-salty-sour. Eat hot, cold or warm. Keeps well.

1 small purple cabbage
1 apple or pear
¼ cup red or white wine, whatever you have in the house
3 Tablespoons olive oil
2 Tablespoons honey
juice from 1 lemon
fresh salt and pepper
a handful of dried cranberries

NANA'S SWEET AND SOUR CABBAGE

The cabbage cooks with the sugar and vinegar to make a nice mellow flavor. My Nana would serve it with potato dumplings and sour bratten. One of my favorite recipes. To make this recipe lighter just substitute the sugar for 1 1/2 times it's amount in Splenda.

  • Saute onion in butter until golden brown.
  • Add the sugar, vinegar, caraway, pepper and salt. Mix.
  • Add the purple cabbage and toss well with the wet ingredients.
  • Cook covered (dutch oven works best) over medium heat about 40 minutes or until cabbage is tender.
