BAKED SWEET POTATOES AND APPLES
For a pretty and tasty side dish, try this combination of sweet potatoes and apples sprinkled with gingersnap crumbs. It's one of my favorites to serve with turkey at Thanksgiving and Christmas.

- Place the sweet potatoes in a Dutch oven; cover with water. Cover and bring to a boil; cook for 30 minutes or just until tender. Drain; cool slightly. Peel the potatoes and cut into 1/2-in. slices. Arrange half of the slices in a greased 13-in. x 9-in. baking dish. Top with the apples and remaining sweet potato slices. , In a small saucepan, bring the brown sugar, butter and apple juice to a boil, stirring constantly. Pour over potatoes and apples. Bake, uncovered, at 325° for 30 minutes or until apples are tender. Sprinkle with gingersnap crumbs. Bake 15 minutes longer.

- Place potatoes and apples in a 6-qt. slow cooker. Add apple juice and beer. Cook, covered, on low 5-6 hours or until potatoes are tender., Drain; return to slow cooker. Add brown sugar, sour cream and butter. Mash potato mixture to reach desired consistency. If desired, top with minced chives.

- Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 30 minutes or until just tender. Drain and cool slightly. Peel and cut into 1/4-in. slices., In a greased 13-in. x 9-in. baking dish, alternately layer potatoes and apples. Pour orange juice over top. SWEET POTATO AND APPLE LATKES WITH GINGER AND SWEET SPICES
I found that the best way to make these so they cook through without burning is to make small latkes, using about 2 tablespoons of the mixture for each one. You can also finish them in the oven.

- Begin heating a large heavy skillet over medium heat. Heat the oven to 350 degrees. Line a sheet pan with parchment and place a rack over another sheet pan.
- Place the grated sweet potatoes in a large bowl. Toss the grated apple with the lime juice and add to the sweet potatoes, along with the ginger, spices, baking powder, salt, oat bran and matzo meal or flour. Taste and adjust salt. Add the beaten eggs and stir together.
- Take a 1/4 cup measuring cup and fill with 2 tablespoons of the mixture. Reverse onto the parchment-lined baking sheet. Repeat with the remaining latke mix. You should have enough to make about 40 latkes.
- Add the oil to the pan and when it is hot (hold your hand a few inches above - you should feel the heat), slide a spatula under one portion of the latke mixture and press down with the spatula to flatten. Repeat with more mounds. In my 10-inch pan I can cook four at a time without crowding; my 12-inch pan will accommodate five or six. Cook on one side until golden brown, about three minutes. Slide the spatula underneath and flip the latkes over. Cook on the other side until golden brown, another two to three minutes. Transfer to the rack set over a baking sheet. Try one latke and if it is still a bit chewy in the middle transfer them to the baking sheet and place in the oven for 10 minutes, until golden brown and soft in the center.
- Serve hot topped with applesauce and low-fat sour cream, thick Greek yogurt or crème fraîche if desired.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.
- Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
- In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
- Bake in the preheated oven 30 minutes, or until lightly browned.

- Preheat oven to 400°F. Place large baking sheet in oven to heat. Combine sweet potatoes, apple juice concentrate, cinnamon and cloves in medium bowl. Sprinkle generously with salt and pepper. Cut 2 sheets of foil, each about 20 inches long. Place 1 foil sheet on work surface. Spread half of sweet potatoes on 1 half of foil so that potato slices are not more than 2 deep. Drizzle with 1/2 tablespoon butter. Fold foil over, enclosing contents completely and crimping edges tightly to seal. Repeat with second foil sheet and remaining ingredients.
- Place foil packets on heated baking sheet. Bake until sweet potatoes are tender, about 20 minutes. Remove from oven; let stand 5 minutes. Divide among 4 plates and serve.
