Steps:
- Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
- Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
- Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
- Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.
THE BEST SWEET YEAST ROLL DOUGH I HAVE EVER FOUND
These homemade rolls are a recipe that brings back memories of childhood. It's a basic, old-fashioned yeast roll recipe. They smell amazing while baking but be patient... good things come to those who wait. Dense but tender, they remind us of a Hawaiian roll in flavor but with a firmer texture. These rolls are delicious alone,...

Steps:
- 1. Scald milk (bring just to a boil and remove from heat immediately).
- 2. Stir in sugar, salt, and butter. Set aside and allow to cool to lukewarm.
- 3. In a large bowl mix warm water and yeast. Stir until dissolved.
- 4. Stir in lukewarm milk mixture.
- 5. Add beaten eggs.
- 6. Stir in half the flour. Beat until smooth. Add remaining flour gradually, mixing as you go. You may need a bit more or less than the total 4 1/2 cups called for in the recipe, depending on the humidity and other factors.
- 7. Your dough should be elastic and slightly stiff but not dry.
- 8. Turn dough out onto a floured board and knead until smooth and very elastic. This usually takes 8-10 minutes.
- 9. Butter the inside of a large mixing bowl. Put dough in bowl and turn dough over a couple of times to coat it all with the butter.
- 10. Cover bowl and place in a warm place so it can rise.
- 11. It will take about 1 hour to double in bulk.
- 12. At that time punch dough down and turn out onto a lightly floured board to shape.
- 13. At this point, you can shape and fill as desired. To make dinner rolls, pinch off about 2-3 tablespoons of dough and shape into a ball. Place each one in a buttered muffin tin or baking pan, barely touching each other, do not crowd rolls.
- 14. Cover prepared rolls and allow to rise in a warm place until doubled in bulk, again about 1 hour.
- 15. Rolls should now touch each other. (A little more rising will occur during baking.)
- 16. Preheat oven to 350 degrees when rolls are about 10 minutes from being ready for baking. When ready to bake place rolls in the oven and bake for 20-25 minutes. They should be browned nicely and smell so good and yeasty!
- 17. Brush tops of rolls with melted butter immediately when removed from the oven.
- 18. Allow rolls to sit for at least 10-15 minutes before eating.

SWEET YEAST ROLLS
This is a simple yeast roll recipe from a dear friend who now lives in Maine. The nice thing about this recipe is that you can lessen the amount of sugar to get a less sweet dinner roll. I like to make them a little bigger and use them for hamburger buns. These make the house smell so good :)

Steps:
- 1. 1st- You cannot add yeast to water that is too hot! It will die! So when a recipe say's that the water or milk needs to be a certain temperature, make sure you use a thermometer! 2nd- Make sure that the yeast you are going to use is at room temperature. 3rd-Yeast always rises best in warm water with some sugar! If the yeast is not bubbling up, it wont allow the bread to rise, so start over! Tip* a Kitchen Aid Mixer works really great for mixing the dough.
- 2. 1) Dissolve yeast in 1/4c warm water. Stir in the 2tsp of sugar. Let sit for about 5 minutes until mixture foams up. 2) Heat milk in microwave or in small saucepan on stovetop. 3) Add sugar, butter, & salt to hot milk and stir until butter is melted. Cool to 105°F-110°F. 4) Pour milk mixture into bowl of stand mixer. 5) Add the yeast mixture & egg and mix together. 6) Mix in all-purpose flour, beating to form a soft dough. Knead with mixer for 5 minutes, adding extra flour, if needed. (This is where a dough hook is your best friend!)You want the dough to be wet, it will kinda look like slime. Don't add to much flour or it will make heavier rolls. 7) Place dough in warm oiled or buttered bowl, turning greased side up. Cover with parchment paper and let rise in warm place ( I turn my oven on to about 400 for a minute to warm up slightly then I put the bowl in there, like an incubator) until doubled in bulk, about 60 minutes. 8) Slightly punch down dough. Divide dough into 12 pieces and shape into round rolls. I do this by dividing the dough in half, and stretching it out into a loaf then cutting them into 6 equal parts. ** See below for how to shape the rolls, it's super easy! Place them, not touching, in greased 13×9x2 baking pan. 10) Cover with parchment paper sprayed with non stick spray & let rise in a warm place until doubled in bulk, about 30-45 minutes. 11) Bake at 375°F for 18-20 minutes or until tops are golden brown. 12) Brush tops of rolls with butter.
- 3. Remember the less flour you use the lighter your rolls will be. The more you work the wet dough in the mixer the chewier they will be. Enjoy! For Butter cut rolls, place dough to rise the final time in a muffin tin. Use a sharp knife to cut one line across top.

- Combine 1 cup flour, dry yeast and salt in bowl of your stand mixer fitted with the paddle attachment and stir until blended. Combine milk, water, butter, and honey in a small microwave-safe bowl. Microwave in 30 second increments until very warm but not hot to the touch (120°F – 130°F). Add to flour mixture.
- Mix for 2 minutes on medium speed, scraping the sides of the bowl as needed. Add in 1/2 cup more flour mix for 2 more minutes on high speed. Stir in just enough of the remaining flour (3/4 to 1 cup) so that the dough will form into a ball.
- Replace the paddle attachment for the dough hook attachment and mix on medium speed for 6-8 minutes, until the dough is smooth and elastic and springs back when lightly pressed with 2 fingers. Alternately you can do this step by hand, kneading the dough on a lightly floured surface for 6-8 minutes. Cover with a towel and let rest for 10 minutes.
- Cut the dough into 12 equal pieces and shape into balls using your hands. Place in greased 8-inch round or square pan. Cover the rolls with a towel and let them rise in a warm place, until they’re doubled in size, about 30 minutes.
