SWEETENED CONDENSED MILK SUBSTITUTE FOR DIABETICS
Being a diabetic is hard. It's difficult to find everyday ingredients. However, if you use some of the "in-a-pinch" recipes and make your own, you can substitute the sugar for Splenda and **HOPE** it turns out right. This did and it's really opened doors for me as a dessert maker.

- Stir milk powder into cold water until dissolved.
- Microwave 1 minute or until steaming. Stir in sugar and vanilla.
- Cover and chill in the refrigerator.

COPYCAT SWEETENED CONDENSED MILK SUBSTITUTE (PAULA DEEN)
Paula Deen made this on her show. It is the butter that sets this apart from other recipes. This milk is so thick and creamy you will want to eat it with a spoon (or at least I always do)! I have used this several times and it has worked like a charm. I am so happy to have this for the holidays, since it's usually the one ingredient I'm out of.

- 1. In microwave safe mixing bowl, combine dry milk and Splenda blend
- 2. Add the water
- 3. Mix well to combine using a wire whip.
- 4. Microwave on high for 45-60sec or till mixture is hot but not boiling.
- 5. Place bowl on counter and mix well .
- 6. Let set 5 mins .
- 7. Stir,cover,and refrigerate for at least 2 hrs.
- 8. Use in any recipe that calls for a can of sweetened condensed milk. . This will keep for up to two weeks in refrigerator if properly covered.

- 1. Add the liquids first, then the powders, cover and blend on high speed for 30 seconds or until smooth. Remove from the blender. Use in a recipe immediately or store in a covered container in the refrigerator
- 2. Tips: A food processor may also be used to blend the ingredients.
- 3. I've used this in most pies that called for a can of sweetened condensed milk and it worked fine. Works particularly well for Key Lime Pies.
SWEETENED CONDENSED MILK SUBSTITUTE

According to them, recipes using dried (powdered) milk approximate the texture but not the flavor of true sweetened condensed milk, and the following recipe tastes much better. - Mix sugar and milk together in a heavy-bottomed saucepan. Stirring often, bring to a low simmer over medium-low heat. As soon as steam starts lifting off the milk, lower the heat even further, and when the sugar is entirely dissolved, put the heat as low as it can go. A simmer burner is great for this.
- The goal is to reduce the quantity in the pot (which is now about 1 3/4 cups) by approximately half. It takes about 2 hours at very low heat to reduce to one cup of liquid. You could speed it up a bit if you watch carefully and stir often. I preferred the freedom to wander the house doing other tasks, and thus allowed my process to take quite some time.
- Once reduced to your satisfaction, whisk in the butter and vanilla. The recipe is equivalent to just less than one whole can of brand name sweetened condensed milk. (One can = 14 ounces, which is 2 ounces shy of 2 cups. by weight, oops! The can is equal to 1 1/4 cups liquid. Substitute tables for homemade condensed milk vary from 1 1/4 cups all the way to 2 cups. Use your judgment!)
