- Preheat oven to 350°. Separate 2 eggs, putting each white in a separate bowl (discard yolks or save for another use); set aside. In a small bowl, beat butter and 3/4 cup sugar until crumbly. Beat in remaining whole egg, 1 egg white and vanilla until well combined. Combine flour and cocoa; gradually add to egg mixture until blended. Pour into a 9-in. square baking pan coated with cooking spray; set aside., In a small bowl, beat cream cheese and remaining sugar until smooth. Beat in the second egg white. Drop by rounded tablespoonfuls over the batter; cut through batter with a knife to swirl. , Bake 25-30 minutes or until set and edges pull away from sides of pan. Cool on a wire rack.

SUNNY'S SOUR CREAM SWIRL BROWNIES

- Prepare the brownie batter according to the package instructions, then transfer to a baking dish. Do not bake.
- In a small bowl, stir together the sour cream, brown sugar, cinnamon sugar and vanilla. Drop the mix randomly around the top of the batter. Drag a skewer through the sour cream areas and batter areas to make random streaks and swirls.
- Bake and cool according to the package instructions.

The most perfect brownie recipe I have ever made. They're soft, yet sturdy and the perfect amount of chocolate- not to sweet or rich... just right. And, wonderful presentation, too! I would be proud to serve these to company any day!! One warning, the pan size specified is uncommon and not one that I own. I use a 15 1/2 x 10 1/2 pan and bake them for 35-40 minutes. They are done when set in the middle- do not let get brown on top.

- Combine cream cheese, 1/3 cup sugar, and one egg in a small bowl. Set aside.
- Mix butter, water, and cocoa in a saucepan and heat until butter is melted. Watch carefully- do not overcook chocolate!
- In another bowl, combine flour, remaining 2 cups sugar, soda, salt, vanilla, 2 eggs, and sour cream.
- Beat chocolate sauce into flour mixture and spread into a greased and floured 17 1/2" x 11" pan. Spoon cream cheese mixture over the chocolate and swirl with a knife to make a marbled effect. Do not over mix.
- Sprinkle chocolate chips evenly over the top.
- Bake at 375 for 20-25 minutes or until the center is set.

- Preheat oven to 325 degrees. Lightly butter an 8-by-8-inch glass baking dish, and set aside. Into a medium bowl, sift together flour, salt, and baking soda; set aside.
- Make chocolate batter: In a large heatproof bowl set over a pan of simmering water, heat 1/2 cup butter and 1/2 cup chocolate chips until they are melted. Remove from heat, and stir in 1 cup sugar. Add half the flour mixture, and stir to combine. Add the whole eggs and 2 teaspoons vanilla, and stir to combine. Mix in remaining flour mixture until it is well combined. Measure out 1/2 cup batter, and set aside.
- Make cream-cheese batter: In the bowl of a food processor fitted with the metal blade, combine the cream cheese, remaining 1/4 cup sugar, remaining 2 tablespoons butter, the egg yolks, and remaining 3/4 teaspoon vanilla. Process until mixture is smooth and well combined. Transfer to a medium bowl. Stir in remaining 1/2 cup chocolate chips.
- Pour chocolate batter into the prepared baking dish. Spoon the cream-cheese mixture over the chocolate batter, spreading it in an even layer to the edges with an offset spatula. Top with reserved 1/2 cup chocolate batter. Run a knife through the mixture to swirl, as desired. Bake until golden brown and the center is set when touched with your finger, 45 to 50 minutes. Transfer baking dish to a wire rack to cool. Cut into squares, and serve.

- Preheat the oven to 350 degrees F. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan.
- Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
- In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the remaining 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the prepared sheet pan. - Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. - Brownie layer: In a saucepan on medium heat melt the butter. - Place a rack in the middle of the oven and preheat the oven to 350 degrees F. Grease a 9-by-13-inch metal baking pan with butter and line it with parchment paper, allowing some paper to hang over the edges to easily lift out the brownies.
- For the brownies: Place the butter and chocolate in a large heatproof bowl. Add 2 inches of water to a saucepan just wide enough to hold the bowl a few inches above the water and bring to a simmer over high heat. Reduce the heat to low and place the bowl over the water (make sure the water doesn't boil and the bottom of the bowl doesn't touch the simmering water or the chocolate may scorch, making it grainy instead of smooth). Cook, stirring occasionally with a rubber spatula, until melted.
- Remove the bowl from the pot and turn off the heat. Stir in the instant coffee if using and the vanilla and salt.
- In a large bowl, whisk the eggs, granulated sugar and brown sugar together until completely combined. Whisk in chocolate-butter mixture until just combined. Place a sieve over the bowl and sift in the flour and fold gently to combine. Pour the batter into the prepared pan and spread evenly.
- For the tahini swirl: Whisk the tahini, sugar, eggs and salt together in a medium bowl until smooth.
- Dollop the tahini mixture all over the top of the brownie batter. Using a butter knife or wooden skewer, swirl the tahini mixture into the top of the brownies. Sprinkle the brownies with the sesame seeds.
- Bake until a toothpick inserted into the brownies comes out clean, 30 to 35 minutes. Sprinkle with sea salt and allow the brownies to cool for 15 minutes in the pan. Remove the brownies from the pan and cut into squares for serving. Store the brownies for up to 5 days in an airtight container.
