SWISS-NUT CHEESE BALL

A friend of mentioned how much she loves Swiss cheese balls, so I went on a search to find a recipe. Here's one from several different recipes I found on the web! My friend just had hip surgery done and I'm looking for ways to surprise her and keep her spirits up. I think this will do it, it's good! :)

Swiss-Nut Cheese Ball image

Steps:

  • Place cheddar, Swiss, and cream cheese, sour cream, Worcestershire sauce, paprika, black pepper, and garlic salt in a medium bowl.
  • Place in a food processor and pulse until well blended.
  • In bowl, place nuts and chives, if using. Stir to mix.
  • Shape mixture into a ball, roll in the chopped nuts and chives(if using).
  • Wrap in waxed paper or plastic wrap and refrigerate until serving time.
  • Serve with raw vegetables or crackers.

8 ounces sharp cheddar cheese, shredded (I used a shredded cheddar or mozzarella mix)
8 ounces swiss cheese, shredded
1 (8 ounce) package cream cheese
1/3 cup sour cream
2 teaspoons Worcestershire sauce
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1/3 cup finely chopped nuts (walnuts or pecans are good, I haven't tried toasted but I bet that would be good)
1/4 cup fresh chives, chopped (optional- you may also use chopped fresh parsley, or fresh thyme)

Bacon, Cheddar and Swiss Cheese Ball image

Steps:

  • In a large bowl, beat cream cheese and sour cream until smooth. Stir in shredded cheeses, 1/2 cup bacon, 1/4 cup pecans, onion, pimientos, pickle relish, salt and pepper. Refrigerate, covered, at least 1 hour., In a small bowl, mix parsley, poppy seeds and remaining bacon and pecans. Spread half the parsley mixture on a large plate. Shape half the cheese mixture into a ball; roll in parsley mixture to coat evenly. Cover. Repeat. Refrigerate at least 1 hour. Serve with crackers.

KITCHENAID NUT CHEESE BALL

This recipe came from a cookbook that came with the KitchenAid that my DH's gran gave me. It is a classic book, as it is from the 70's, but when I searched I could not find many KitchenAid recipes, so hey if I was looking for some, maybe someone else is too. Yay for getting my first KitchenAid!

Swiss Cheese Balls image

Steps:

  • Preheat oven to 300 degrees.
  • In a sauce over medium heat, melt the butter.
  • Stir in the 2 T flour.
  • Add milk and stir to mix well.
  • Add the Swiss cheese and seasonings to taste.
  • Stir so all ingredients are well combined.
  • Add the egg yolks and remove from the heat.
  • Pour mixture in a 9x9" baking dish.
  • Bake in the preheated 300 degree oven for 10 minutes.
  • Remove the dish from the oven and refrigerate for 2 hours or until completely cooled.
  • Heat oil in a deep fryer.
  • Form balls and roll in the additional flour.
  • Deep fry the cheese balls, a few at a time, until golden brown.
  • Remove from hot oil and drain.

1/4 cup butter
2 tablespoons flour, plus additional flour for rolling balls
1/2 cup hot milk
1/2 lb swiss cheese, grated
salt and pepper
nutmeg
2 egg yolks
oil (for deep frying)

Steps:

  • In a large bowl, beat cream cheese and sour cream until smooth. Stir in the Swiss and cheddar cheeses, onion, bacon, pecans, pimientos, relish, salt and pepper. Cover and refrigerate for at least 1 hour., In a small shallow bowl, combine the bacon, parsley, pecans and poppy seeds. Shape cheese mixture into a ball; roll in bacon mixture.   • Cut bacon into small pieces and sauté until cooked. Once cooled, set aside 1/4 of the bacon for the topping.
  • In a bowl, add 3/4 of the bacon, 1/4 cup sour cream, 16 oz cream cheese, 1/2 cup four-cheese blend, 1 cup cheddar cheese, 3 Tbsp green onions, 1/4 cup walnuts, 3 Tbsp Ranch seasoning, 1/2 tsp garlic powder, 1/4 tsp pepper, and 1 tsp poppy seeds. With a wooden spatula, mix all ingredients until well combined.
  • Finely chop the remaining 1/4 of bacon, 1/4 cup cheddar cheese, 1 Tbsp green onion, and 1/4 cup walnuts. Mix together with the 1/4 tsp poppy seed. Spread this mixture onto a cutting board.
  • Form a ball out of the cheese mixture and roll the cheese ball over the toppings to fully coat and shape into an even ball as it's coated. Serve right away or cover and refrigerate until ready to serve.
