TACOS ON A STICK

- In a large shallow dish, combine the taco seasoning, tomato juice and oil; mix well. Remove 1/2 cup for basting; refrigerate. Add beef and turn to coat. Cover; refrigerate for at least 5 hours., Drain and discard marinade from beef. On metal or soaked wooden skewers, alternately thread beef, peppers, onion and tomatoes. Grill, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Continue turning and basting until meat reaches desired doneness, 8-10 minutes. If desired, serve with salsa con queso or sour cream.

MEXICAN PICK-UP STICKS
While looking through some of the cookbooks that I purchased recently at a moving sale, I came across this recipe. It is quick, easy and delicious. It would be a great finger food at any Holiday party!

Steps:
- 1. Preheat oven to 250 degrees.
- 2. In a Large Bowl, combine Onions, Potato Sticks and Peanuts.
- 3. Pour melted butter over and stir well to combine.
- 4. Sprinkle Taco Seasoning over the mixture, stir to distribute evenly.
- 5. Place in a 9 X 13 inch baking dish.
- 6. Bake for 45 minutes, stirring every 15 minutes.
FISH STICK TACOS

- Cook the fish sticks according to the package directions.
- Pile 3 fish sticks onto each Homemade Tortilla. Add some of the Cabbage Pantry Slaw, both salsas and cheese, then top with a few slices of jalapeno and a squeeze of a lime wedge. Serve immediately.
- In a bowl, stir together the flour and salt. Stir in the vegetable oil, then slowly pour in the hot water, stirring gently. When the dough comes together, turn it out onto a lightly floured surface. Knead it gently a few times to smooth it out.
- Heat a cast-iron skillet or griddle over medium-high heat. Pinch off a piece of dough slightly smaller than a Ping-Pong ball and roll it into a 5-inch circle. It should be extremely thin.
- Cook on the dry skillet for about 1 minute on the first side, until it starts to brown a little, then flip it and cook for about 30 seconds on the second side. Remove and stack onto a kitchen towel, then repeat with the rest. As you stack the tortillas, wrap them in the kitchen towel while you cook the next ones.
- Put the shredded cabbage in a large bowl. Add the dressing, jalapenos and their liquid, pimentos and salt and pepper to taste. Stir until thoroughly combined.

I got this recipe from the Taste of Home's Quick Cooking Annual Recipes 1999. Looking for something a bit different to munch on? Try this zesty snack mix. I enjoy the extra kick from the spices. Once batch is never enough for friends and family. Watching games this disappears faster than almost everything else.

- In a large bowl, combine the potato sticks, onions, and peanuts.
- Combine butter and taco seasoning; mix well.
- Pour over potato stick mixture and toss to coat.
- Place in three ungreased 15x10x1-inch baking pans.
- Bake uncovered at 250°F for 45 minutes, stirring every 15 minutes.
- Store in airtight containers.
- (Try adding some hot sauce to the butter and taco seasoning mix if you want a nice spicy kick).

CHEESY TACO BREADSTICKS RECIPE BY TASTY

- Sauté onions and garlic until transparent. Add the ground beef and taco seasoning. Cook until browned. Remove from heat and set aside.
- Preheat oven to 425˚F (220˚C).
- On a floured surface, cut the pizza dough into 5 strips and place spoonfuls of the beef mixture into the middle of each strip, followed by the Mexican cheese blend.
- Fold and pinch the dough around the cheese and meat along the entire strip, ensuring to close off the ends.
- Brush each breadstick with olive oil and transfer to a baking sheet.
- Bake for 10 minutes.
- Remove from the oven and top each breadstick with more cheese.
- Bake for another 5 minutes or until the cheese is golden brown.
