Tamarillo Poached in Red Wine image

Steps:

  • Peel the tamarillos.
  • These can be blanched in water first to make the peeling easier.
  • Then slice lengthwise.
  • Place the tamarillos, cut side up, into an oven dish.
  • Pour the wine over them.
  • Sprinkle with the sugar.
  • Bake 15 to 20 minutes at 180 degrees C.
  • Remove from the oven.
  • Turn the tamarillos over to soak up the juices, which will have become gorgeous and thick.
  • Serve warm or cooled with whipped cream.
  • Spoon remaining liquid over the top.

  • Combine sugar, wine, vanilla bean and seeds and 250ml water in a saucepan, bring to the simmer over medium heat, stirring to dissolve sugar (3-5 minutes). Add tamarillos, cover with baking paper, weight with a plate, cook over low heat until tender (5-10 minutes).
  • Remove tamarillos from syrup, then reduce syrup over high heat to 800ml (10-15 minutes). Cool slightly, then pour over tamarillos and refrigerate until chilled (2 hours). Serve tamarillos with chocolate mousse.
