CLASSIC TAPIOCA PUDDING
A classic tapioca pudding recipe that requires a lot of attention, but it's worth it. Tapioca pudding is a great comfort food and can be served warm or cold.

Steps:
- Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
- Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.

FLUFFY "TAPIOCA" PUDDING
My neighbor( 22yrs old) has never tasted TAPIOCA! So naturally I had to whip up a batch, and called her over..to taste.... I am pleased to say she loved it! This recipe is from the box of KRAFT MINUTE TAPIOCA. Great for puddings and pies. The box has 2 recipes, This is the fluffy one. I do remember grandma always added tapioca...

Steps:
- 1. Beat egg white in a medium size bowl with an electric mixer on high speed untilfoamy. Gradually add 3 Taablespoons sugar, slowly, beating till soft peaks form.
- 2. Mix tapioca, remaining 3 Tablespoons sugar, milk,and egg yolk in a medium saucepan. Let sit for at least 5 minutes.
- 3. Cook on medium heat, stirring constantly, until mixture comes to a full boil. (a boil that doesn't stop bubbling when stirred)
- 4. Remove from heat. Quickly stir in fluffy egg whites untill well blended. Stir in vanila. Cool 20 minutes, stir. Serve warm or cold. With a sprinkle of ground nutmeg. To dress it up...add fruit, like canned sliced peaches and a dollop of whipped cream. NOTE: Picture #4 and recipe .. is from a Minute Tapioca Box..and KRAFT

- Mix juice and tapioca in medium bowl. Let stand 5 minutes. Meanwhile, melt butter in large saucepan on medium heat. Add pineapple, brown sugar, nutmeg and salt; mix well. Cook 5 minutes, stirring frequently.
- Add tapioca mixture; stir. Bring to a full boil , stirring constantly. Remove from heat. Cool 20 minutes. Transfer to serving bowl. Cover and refrigerate several hours or until chilled.
- Spread whipped topping over pudding just before serving; sprinkle with coconut.

DIETETIC DIABETIC PINEAPPLE PUDDING
I am on a rather strict diet at the moment, and came up with this yummy dessert that meets the letter of the 'law' if not the spirit! Be sure to use pineapple in its own juice, NOT pineapple in syrup. Cook time is chill time - this is very quick to make.

Steps:
- Mix the pineapple, with its juice, the soymilk and the tapioca in a medium sized pot.
- Heat over medium heat, stirring frequently.
- Once it begins to simmer, turn it down and continue stirring, until thickened, about 10 minutes. There should not be any white specks left in the tapioca.
- Remove from the heat and stir in the vanilla.
- Divide amongst small serving dishes and garnish with a few berries if desired; blueberries, strawberries or raspberries would all be good.
TAPIOCA FRUIT PUDDING
This recipe is a family favorite. It always gets eaten really quickly, and it doesn't seem to matter if the recipe is doubled or even tripled. It takes some planning ahead and effort, but it is well worth it. Preparation time does not include soaking or cooling in refrigerator.

Steps:
- Soak tapioca overnight in enough water to cover.
- Add or remove water so that there is just enough to cover the tapioca. Cook on low-medium heat on stove until almost all pieces are clear.
- Add sugar; stir until dissolved.
- Remove from heat. Add lemon juice.
- Cool mixture in refrigerator. (This is a good place to store it in the refrigerator, if you are trying get work done ahead. It is fine for at least 2 days; I have never tried longer).
- Stir "gel" so that the individual pieces of tapioca are more separated. Add pineapple and grapes.
- Whip the cream and fold in whipped cream and bananas just before serving.
