Steps:
- Place bottom pastry in a 9-in. pie plate. Layer crackers in shell; set aside. In a small saucepan, combine remaining ingredients; bring to a boil. Carefully pour over crackers (filling will be very thin). Cool for 10 minutes. Cut lattice strips from remaining pastry; place over filling. Seal and flute edges. Bake at 400° for 25-20 minutes or until golden brown.

Taste of Home entry by Lynn Hamilton says," No one ever guesses these sweet dessert squares are made with zucchini!" I have change up the recipe to suit my family's taste, but the concept is still the same- I just added a few different ingredients.

Steps:
- 1. Preheat oven to 375^. Crust: Combine dry ingredients, cut in cold shortening. Place egg yolks in a measuring cup and stir with fork until blended. Stir in enough cold water to make just a cupful. Sprinkle gradually over dry ingredients; toss with fork to make soft dough. Roll out 1/2 the dough and line a jelly roll pan (15x10-inch)with this 1/2 on bottom and up sides and lip. Set aside.
- 2. Filling: In a large saucepan, bring zucchini and lemon juice to a boil. Reduce heat; cover and simmer for 5-6 minutes or until tender. Drain. Stir in the sugars, cinnamon, nutmeg cream of tartar and flour. Cook and stir for 2-3 minutes. Stir in nuts and raisins if using.
- 3. Spread filling evenly over crust. Dot top with a little butter. Top with remaining crust. Seal and crimp edges. Brush with a little milk and sprinkle top with sugar and cut vents for steam or prick top all over with a fork.
- 4. Bake in oven for about 25-30 minutes or until golden brown, Cool on wire rack. Combine drizzle ingredients and drizzle over top when cool. Cut into squares.

- Mix flour and salt and cut in shortening. Add egg and milk mixture and mix till it forms a ball. Divide dough in half. Roll first half in 17 x 12 inch rectangle. Place in cookie sheet and bring pastry up sides.
- Cover pastry with apples and sprinkle with sugar and cinnamon (homemade chunky applesauce also works well).
- Roll out second half of dough and place on top of apples. Moisten edges with milk and pinch together.
- Beat egg white until stiff and brush on crust. Bake at 400°F for 1 hour.
- Mix glaze ingredients together and brush on crust.
- This square freezes beautifully.

- In a large bowl, combine flour and salt; cut in shortening and butter until crumbly. Gradually add orange juice, tossing with a fork until dough forms a ball. Divide dough into two balls. Wrap in plastic; refrigerate for at least 30 minutes. , Line a 9-in. deep-dish pie plate with heavy-duty foil, leaving 1-1/2 in. beyond edge; coat the foil with cooking spray. Combine 4 tablespoons butter, brown sugar and pecans; spoon into prepared pie plate. , In a large bowl, combine the apples, sugar, flour, cinnamon, nutmeg and remaining butter; toss gently., On waxed paper, roll out one ball of pastry to fit pie plate. ZUCCHINI APPLE PIE
I'm an RN and a patient's family shared this recipe with me when I was complaining about having too much zucchini. It tastes surprisingly like apple, most people don't realize it's not apple until you tell them. Make sure the zucchini used in recipe has skin soft enough that your thumbnail can pierce it.

- Peel the zucchini. Cut into quarters lengthwise, then remove seeds and cut crosswise (as you would cut apples for apple pie). Toss together 4 cups chopped zucchini, lemon juice and salt. Place mixture into frying pan and cook until tender-crisp.
- In a separate bowl, mix together the brown sugar, cinnamon, cream of tartar, nutmeg and flour. Add the cooked zucchini to sugar mixture and mix well. It will be a little runny, but that's OK.
- Place filling into a 9 inch pie crust, dot with butter, and place top crust on. Bake in oven at 400 degrees F (205 degrees C) for 40 minutes or until golden brown.

RAW OATMEAL: TASTES LIKE APPLE PIE
Enjoying a raw food diet does not mean we have to forgo our favorite comfort foods. We just have to modify them. Take oatmeal for instance. Instead of using rolled oats (which are flattened, steamed and toasted), preparing "oatmeal" gives us an excuse to eat raw oat groats. I dig the chewy texture of groats and find that soaking them for 8 hours is sufficient. Feel free to soak longer for softer grains. Either way, this raw oatmeal recipe is sure to warm you from the inside.

- Lightly pulse the chopped apple in a food processor or blender. If you prefer a smooth consistency add water as necessary and puree. You may also need to add a little water if your apple doesn't release much juice.
- Add cinnamon and 1 cup of oats (keeping ¼ cup aside for garnish), continue to blend but your finished mixture should have some texture.
- Grab your dishware and divide into two servings.
- Garnish with remaining oats, sliced banana, chopped dates and nuts. Walla!
- You can up the nutrients by topping your oatmeal with superfoods like chia seeds, goji berries, or raw cacao. Just know the more you add the less "apple pie" you'll taste.

- Pour the warm apple mixture into the pie plate. Press down on the apples so that they lay flat and don’t have much space between them. This gives a nice, thick pie!
