TAVE DHEU
Albanian Tave Dheu is one of Albania's national dishes and is also know as Fergese me melçi (with Liver). There is a vegetable version called Fergesë e Tiranës me Piperka which is just as tasty! This is a great recipe that allows me to get out my clay dishes and bake the same way you would back in Albania - I have a big thumbs up from the family for this dish! This recipe is best cooked in clay dishes, 15cm by 5cm deep. It gives it a natural authentic taste and looks good too!

Steps:
- Firstly, brown the liver for a few minutes in olive oil, remove from the pan and set aside for later.
- Add the garlic into the remaining oil and saute for 2 minutes before adding the red peppers and tomatoes then continue to saute on a medium heat for 5 minutes.
- Add the flour while stirring continuously, then add in the feta and ricotta cheese. Continue stirring for a few minutes before adding the bay leaves, water and liver.
- This is the best time to season to taste with chilli flakes, salt and pepper - then leave to cook together for 5 minutes.
- Split the mixture into 4 clay dishes and cook on 200 degrees for 25 minutes.
- Serve the Albanian Tave Dheu while hot and bubbling.

Steps:
- Cut meat into 4 serving pieces. Season with salt and pepper to taste. Dot with 1/4 cup butter and bake at 350 degrees, basting now and then with pan juices, about 40 minutes, or until well browned.
- Stir rice into pan juices. Remove baking pan from oven and set aside while preparing yogurt sauce.
- Combine yogurt with salt and pepper to taste. Stir in eggs until smooth. Set aside.
- Melt remaining 1/2 cup butter and add flour. Saute until smooth. Add yogurt mixture and stir until smooth. Pour yogurt sauce in baking pan, stirring it with meat pieces, and bake at 375 degrees 45 minutes. Serve hot.

VEGETARIAN ALBANIAN LEEK CASSEROLE (TAVE ME PRESH)
This is a vegetarian version of a traditional Albanian dish. It makes a tasty side and is delicious served with yogurt, which is commonly eaten in Albanian meals. You can use any mushrooms you want, but the stronger tasting ones are better. Spice to taste, I like more red pepper than the Albanians probably do. Adapted from 20 Albanian Recipes and submitted for My Food Odyssey.

- Wash and cut on a slant into 1-inch thick slices the whites and pale green of the leeks.
- Saute leeks in a little oil and place in a baking pan.
- Chop onions and mushrooms coarsely.
- Saute onion and mushrooms in remaining oil.
- Add broth powder, water, tomato sauce, red pepper, salt and pepper, and bring to a boil. If your mushrooms are not very watery, add a little more water and broth.
- Pour onion/mushroom mixture over the leeks.
- Bake for 45 minutes at 375 degrees.
- Serve hot.
