Steps:

  • Place chicken breasts between two layers of plastic wrap and lightly pound them to an even thickness (about 1/2 inch). Let stand at room temperature about 30 minutes.
  • While chicken rests, whisk together ketchup, hoisin, brown sugar, lime juice, sesame oil, and garlic.
  • Season both sides of chicken with salt and pepper. Prepare grill for direct-heat cooking; let grates get very hot (this ensures a good sear without drying out meat).
  • Oil grates and cook chicken, turning occasionally, until charred in places and cooked through, 8 to 10 minutes total. In the last 2 to 3 minutes of cooking, brush hoisin mixture over both sides of chicken, turning occasionally; serve.

8 boneless, skinless chicken breasts (each about 8 ounces)
1/4 cup ketchup
2 tablespoons hoisin sauce
2 tablespoons light brown sugar
2 tablespoons fresh lime juice
2 teaspoons sesame oil
1 small garlic clove, grated
Kosher salt and freshly ground pepper

  • In a bowl, whisk together 1 clove minced garlic, 1/8 tsp freshly grated ginger, 1 tbsp brown sugar, and 1/3 cup low sodium soy sauce.
  • Add the chicken thighs to the soy sauce mixture and stir just to combine. Cover the chicken with plastic wrap and let it marinate in the refrigerator for at least 2 hours.
  • Once the chicken has marinated, fire up the grill to medium-high heat and cook each chicken thigh for about 4 minutes on each side.
  • While the chicken is grilling, heat 2 tbsp of grapeseed oil in a large pan over medium-high heat. Add the minced garlic and stir for about 10 seconds. Then add in the soy sauce, sake, mirin, brown sugar, and water. Let the sauce come to a simmer, then reserve 1 tablespoon of the liquid into a small bowl. Then add 2 tablespoons of cornstarch into that bowl. Mix until the cornstarch is dissolved. Then pour the mixture back into the sauce. Bring the heat down to low and let it simmer for about 4 minutes. You don't want it to cook for too long, or else it will become bitter.

  • Marinate the chicken thighs. Combine all ingredients for the marinade in a gallon sized zip top bag and mix well to combine. Place all chicken thighs in the bag, remove as much air as possible, and seal tightly. Refrigerate for at least 4 hours or up to 8 hours.
  • Grill the chicken. Preheat your grill to 375 degrees F with 2-zones of heat (high heat and low heat). Remove the chicken thighs from the marinade and set the marinade aside. Place the chicken thighs on the low heat side of the grill, close the lid, and cook for 5-7 minutes each side, or until the internal temperature of the chicken reads 145 degrees F.
  • Make the teriyaki sauce. While the chicken grills, preheat a medium saucepan over medium high heat. Pour the marinade into the saucepan and bring to a boil. In a small pan, combine the cornstarch and cool water, mixing until there are no chunks of cornstarch left. Pour the cornstarch mixture into the boiling sauce, while whisking. Remove the thickened sauce from the heat and pour about ½ cup of sauce into a separate bowl. Set aside the rest of the sauce for serving with the chicken.
  • Sauce the chicken. Baste each of the chicken thighs with the ½ cup of reserved teriyaki sauce. Move the thighs over to the high heat side of the grill and cook, flipping and basting once more, until the sauce has caramelized on the outside of the thighs and the internal temperature reads 170-175 degrees F.
