GLAZED SPICED PUMPKIN BARS

Pair the great taste of pumpkin with Fiber One® original bran cereal in a spicy dessert bar.

Glazed Spiced Pumpkin Bars image

Steps:

  • Heat oven to 350°F. Spray 15x10x1-inch pan with cooking spray, or grease and flour pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • In large bowl, beat oil, 1/2 cup orange juice, the pumpkin and eggs with electric mixer on low speed until well blended. Stir in crushed cereal; let stand 10 minutes.
  • Beat in remaining bar ingredients except walnuts on low speed until well blended. Stir in walnuts. Spread evenly in pan.
  • Bake 35 to 40 minutes or until top springs back when touched lightly in center. Cool completely, about 1 hour.
  • In small bowl, mix powdered sugar and enough of the 4 to 6 teaspoons orange juice for desired drizzling consistency. Drizzle over bars. For bars, cut into 8 rows by 4 rows.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
  • Beat pumpkin, white sugar, vegetable oil, and eggs together in a large mixing bowl. Combine flour, baking powder, cinnamon, pumpkin pie spice, baking soda, and salt in a sifter; sift into the pumpkin mixture and mix well; pour into the prepared pan.
  • Bake in preheated oven until center springs back when lightly touched, 35 to 40 minutes. Cool completely before frosting.
  • Beat cream cheese and butter together in a bowl until smooth; add vanilla extract and beat. Gradually beat confectioners' sugar into the frosting, adding in small amounts and assuring each batch is incorporated before introducing the next. Spread over the pumpkin bars.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray doughnut pan with non-stick cooking spray.
  • Combine eggs, pumpkin, brown sugar, sugar, butter, oil, and pumpkin pie spice extract in a bowl; mix until well combined.
  • Sift flour, pumpkin pie spice, baking powder, baking soda, and salt together in a second bowl. Add to egg mixture and stir until combined. Evenly distribute mixture amongst the 12 donut pans. Wet finger and smooth out the tops.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 12 to 16 minutes. Cool completely on wire racks, at least 30 minutes.
  • Stir together powdered sugar, 1/4 cup milk, vanilla, pumpkin pie spice extract, and salt in a bowl until completely combined. Add more milk, 1 tablespoon at a time, if necessary to reach desired glaze consistency.

  • 1. In large bowl, combine pound cake mix, 1 egg, butter and 2 teaspoons of the pumpkin pie spice. Use hands to mix all together to make a crumbly coarse mixture. Press this all into a greased cookie sheet (15x10.
  • 2. Next in large bowl, beat the cream cheese until fluffy.Gradually beat in condensed milk, the remaining 2 eggs, pumpkin and remaining pumpkin pie spice, and the salt. Mix well. Pour over crust mixture. Sprinkle with nuts. Bake 350 degrees for 30-35 minutes. Don't overbake. Bake until set using a toothpick for doneness. Cool completely and cut into 48 bars. Store in fridge when not using.
