EASY TEX-MEX CHICKEN AND RICE

- In a deep skillet, heat the olive oil over medium-high heat. When the oil is hot, add the garlic, onion, chili powder, cumin, cayenne pepper, salt, pepper and turmeric. Cook, stirring often, until the onion is soft and the spices are toasted, about 3 minutes.
- Pour in the tomato sauce, diced tomatoes and green chiles, chicken and both bags of rice. Stir together and cook until the rice is heated through and beginning to absorb some of the liquid, about 5 minutes. Turn the heat to low and sprinkle the pepper jack over the top. Cover with a lid and allow the cheese to melt completely, 2 to 3 minutes.
- Sprinkle over the cilantro and serve.
CHICKEN 'N WAFFLE TACOS
Let round waffles stand in for taco shells in these Chicken 'n Waffle Tacos! This chicken and waffles take on a Tex-Mex favorite is sweet and savory.

- Heat oven to 400ºF.
- Coat chicken with coating mix as directed on package; place on baking sheet. Bake 12 to 15 min. or until done.
- Meanwhile, spray both sides of waffles with cooking spray. Gently fold each in half; secure with wooden toothpick. Place on separate baking sheet. Add to oven to bake with chicken for the last 8 min. Mix syrup, barbecue sauce and Sriracha sauce until blended.
- Remove toothpicks from waffles. Place chicken strips in waffle shells; top with syrup mixture and onions.

TEX MEX CHILI AND CORNBREAD WAFFLES
Next time you grill out or grill in, throw on a few extra pieces of steak to use for another day. You are not limited to just steak; chicken, pork, roast, turkey would also work great. This is a drier version of chili that I like to serve over cornbread waffles. Hope you enjoy!

- 1. CHILI: Slice grilled steak into thin bite size pieces; set aside. Saute onion, bell pepper and jalapeno in oil over medium heat until slightly tender; add steak and heat. Add remaining ingredients and heat through.
- 2. CORNBREAD WAFFLES: Stir together cornmeal, flour, salt, cayenne, & sugar. In another bowl mix egg, milk, butter and corn.
- 3. Add wet ingredients to dry and stir until moistened.
- 4. Bake in a preheated waffle iron until crisp and browned.
- 5. Serve with your favorite toppings.

This is a version of the famous King Ranch Chicken casserole. Careful, it packs a bit of heat!

- Preheat oven to 350 degrees F (175 degrees C).
- Lightly grease a 9x13-inch baking dish. Spread corn chip crumbs over the bottom of the baking dish and press crumbs into place.
- Melt butter in a large skillet over medium-high heat; cook and stir onion in melted butter until tender, 6 to 7 minutes.
- Stir diced tomatoes, cream of chicken soup. cream of mushroom soup, green chiles, milk, sour cream, chili powder, and cumin in a large bowl. Add chicken and cooked onion; stir to combine. Pour mixture over corn chips and top with Cheddar cheese.
- Bake in the preheated oven until bubbly and cheese is melted, 55 to 60 minutes. Let stand for 10 minutes before serving.

- Preheat the waffle maker.
- In a large bowl, combine the flour, cornmeal, cheese, baking powder, sugar, salt and chili powder. Add the milk, eggs, vegetable oil and chiles, and mix just until moistened. Mixture may be a little lumpy.
- Bake in preheated waffle maker according to manufacturer's instructions. Makes 4 to 5 large waffles.
- Serve with your favorite salsa, sour cream and additional grated cheese.

- In a container large enough to hold all and keep chicken covered, soak the chicken in the buttermilk for at least 30 minutes or overnight. The lactic acids tenderize the chicken.
- Mix the flours, salt, black pepper and poultry seasoning together in a bowl. Dredge each chicken piece in the seasoned flour to coat well.
- In a large cast iron pan or frying pan render the bacon until crisp. Remove from pan and set aside.
- Heat about 1/2 inch of combined oil, bacon fat and butter in the same pan. Place the chicken tenders in the butter and oil and fry for 6 to 8 minutes. With tongs turn each piece over, then cover the pan to cook for an additional 6 minutes. Drain on paper towels and salt well and keep warm while making the waffles.
