SPICY CHICKPEA TAGINE
This tagine is a deliciously spicy meal that is my go-to dinner for guests, because everyone loves it and it's vegan! I usually pair it with some cumin roasted cauliflower.

Steps:
- Heat oil in a tagine or Dutch oven over medium heat; cook and stir onions and garlic until softened, 5 to 10 minutes. Add turmeric, cumin, agave nectar, cinnamon, cayenne pepper, and black pepper and stir until onion mixture is evenly coated. Add just enough water to cover the bottom of the tagine; add carrots and salt. Cook over medium-low for 12 minutes.
- Mix chickpeas into carrot mixture, adding more water if needed to cover the bottom but keeping the sauce thick. Cook mixture for 7 minutes.
- Serve tagine with lemon wedges and cilantro.

Steps:
- In a soup pot, combine the onions and garlic with the oil and salt.
- Cover and cook on medium heat for 8-10 minutes, or until the onions are soft and translucent, stirring occasionally.
- Add the celery, bell peppers, chile, oregano, thyme, cumin, and black pepper and saute for 10 minutes, stirring often.
- Add the water and tomatoes, cover and simmer until the vegies are tender, 10-15 minutes.
- Add the black-eyed peas, your choice of beans, and the barbecue sauce.
- Mix well, cover and simmer for 10 minutes.
- Add salt to taste.
- Garnish with crushed tortilla chips and sour cream on top if desired.

TEXAS ROADHOUSE GREEN BEANS (COPYCAT)
We really like these green beans at TRH and after a little searching found this recipe. Recipe is courtesy of WTVR, Richmond, VA. When a friend of mine started working there, I asked if this is how they prepare their green beans and she shook her head yes, but said no with a smile. I have included both variations for this recipe; choose the one to your liking. Cook/simmer time is approximate.

- Using a colander, thoroughly drain green beans. Set aside.
- Mix water, sugar and pepper until well incorporated. Set aside.
- Preheat your cooking pan to Medium High heat.
- Raw Bacon Method.
- Using a cutting board and a knife, dice the raw bacon into equal size pieces. Place diced bacon into preheated cooking pan. Continually stir bacon with large spoon to keep the bacon from burning.
- Once bacon is cooked add the onions and cook until they are tender and light brown.
- Diced, Cooked Ham Method.
- Using a cutting board and a knife, dice the cooked ham into equal size pieces. Place the diced ham and onions into the preheated cooking pan.
- Using the large spoon, continue to stir the ham and onions until the ham is lightly brown and the onions are tender.
- Now that the onions are tender add the liquid mixture and the beans.
- Using the rubber spatula stir the mixture until incorporated.
- Bring mixture to a boil and turn heat to simmer. Serve beans as soon as you are ready.
TEX-MEX BEEF & BEAN TAMALES #RSC
Ready, Set, Cook! Reynolds Wrap Contest Entry. These cheesy tamales are filled with seasoned beef and beans, ranch cream cheese, and salsa. The masa (cornmeal dough) is made with fresh sweet corn and Monterrey Jack cheese. Wrapped in foil and steamed, these tamales are a complete portable meal unto themselves, though I like to serve them with extra ranch crema on the side. Tamales are fun to assemble and much easier to make than you might think.

- Make the masa dough for the tamales: Beat one stick of butter with 2 tablespoons sugar until fluffy. Add the egg and beat until mixture is smooth.
- Place the corn kernels in a food processor or blender with the buttermilk and the salt and process until smooth. Add corn to the butter/egg mixture and beat until well blended.
- Stir the baking powder into the masa (harina de maiz). Add dry ingredients to the corn/butter mixture, mixing until well blended. Stir in 3/4 cups grated Monterrey Jack cheese. Set aside.
- Place the bacon in a heavy skillet and cook over medium heat until crispy. Remove from heat and set aside for another use, leaving rendered fat in the skillet.
- Cook the chopped scallions and tomatoes in the bacon fat until soft and fragrant. Add the ground beef and cook over medium heat, stirring, until browned. Add the can of black beans (with liquid) and cook, stirring, until liquid is evaporated. Remove from heat and set aside. Taste for seasoning and add more garlic salt if desired.
- In a medium bowl, whisk together the softened cream cheese with the ranch dressing.
- Fill and Wrap Tamales: Place a 7 by 12 inch rectangle of Reynolds Wrap Non-Stick foil on the counter, with the non-stick side facing up.
- Spread about 1/3 cup of the corn masa dough into a 3 x 5 inch rectangle in the center of the foil. Spread 1 tablespoon of the cream cheese mixture on top of the masa. Place 1/4 cup of the beef and bean mixture on top of the cream cheese. Sprinkle 1 tablespoon grated Monterrey Jack. Top with another 1/3 cup masa, and spread it to cover the filling.
- Fold one short end of the foil up over the filling. Fold the two long sides in over the filling. There will be one end that is still open. Lift the tamale with the open end facing upwards and twist foil to close that end.
- Make 3 more tamales in the same way.
- Place tamales in a steamer basket, and place the basket over a pot with 2 inches of simmering water. Tamales should not touch the water. Cover tightly with a lid and steam tamales for 1 hour, checking water level from time to time.
- Let tamales cool for 15-20 minutes before serving. Serve with extra cream cheese mixture on the side.
- Tamales can be made ahead and reheated in the oven or in a steamer. Unwrap tamales before reheating them in the microwave. This recipe makes 4 large tamales. You can divide the ingredients into smaller amounts to make 8-10 smaller tamales, or even 16 appetizer-size tamales.

- Peel and slice the onions. Heat the olive oil in a large saucepan and cook the sliced onions over a low-medium heat for 8-10 minutes until very soft and just starting to brown.
- Peel the carrots and cut into 8-9mm (approx. ⅓ inch) slices. Add the carrots, thyme, and allspice to the onions in the pan and mix well. Continue to cook for another 3-4 minutes.
- Add the stock and tomato puree to the pan, stir well, then cover and simmer over a low heat for 15-20 minutes until the carrots are very tender.
