The Rumpolitan Recipes
THE RUMPOLITAN
The Spaniard - a wonderfully cozy, cluttered, friendly pub in Belfast, Northern Ireland - has a fine assortment of rums and a winning way with rum-based cocktails. I've had many excellent daiquiris there, but I can also vouch for the Rumpolitan, the bar's alternative to a Cosmo. The Clément Créole Shrubb orange liqueur contributes a subtle, welcome note of bitterness and a flash of spice.

Steps:
- Shake the liquid ingredients with ice, and strain into a rocks glass filled with ice cubes. Garnish with the lime wedge.
THE GHAZAL
I created this drink, which is named after the ancient Persian poetic form, to pair with Middle Eastern snacks. Rosewater enhances the cucumber-and-rose infusion in Hendrick's gin. A good measure of fresh lime juice brightens it up with acidity, and mint adds more flavor.

Steps:
- Fill a mixing glass with ice and one mint leaf per serving.
- Pour in the gin, lime juice and rosewater.
- Stir for 30 seconds, strain into a chilled coupe and float mint leaves on top.
LAZY OLD-FASHIONED
Here's the easiest ever old-fashioned. No stirring. No garnishing. Just some whiskey, bitters, sugar and ice - an eternally excellent combination, even without any ritual or fuss.

- Put the sugar in the bottom of an old-fashioned glass. Douse it with the bitters. Add ice and pour in the whiskey.

This classic drink is essentially a ginned-up tall glass of lemonade.

- In a cocktail shaker filled with ice, vigorously shake lemon juice, simple syrup and gin. Strain over fresh ice into a highball glass and top with soda water. Garnish with a wedge or wheel of lemon.
