BROCCOLI FETTUCCINE ALFREDO
This versatile side dish is a variation of a recipe I've had for years. Instead of broccoli, you can use green beans, carrots or your family's favorite vegetable. You can even add cubed cooked chicken and turn it into a main dish.-Robin Stevens, Cadiz, Kentucky

Steps:
- Cook fettuccine according to package directions. Meanwhile, in a large saucepan, bring 1 in. of water and broccoli to a boil. Reduce heat; cover and simmer for 4-6 minutes or until crisp-tender. Drain., In a large saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually whisk in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in Parmesan cheese and broccoli. , Drain fettuccine; top with the broccoli mixture.

Steps:
- Prepare the broccoli per packaged directions and set aside.
- Brown the stew beef, cutting the larger pieces into smaller ones. Set aside.
- Heat one gallon of water to a rolling boil and prepare the pasta per packaged directions.
- For the Alfredo sauce, I used Grits-N-MS's wonderful recipe, #64196: melt the butter in a sauce pan.
- Add cream cheese and whisk.
- Add half and half.
- Add parmesan cheese and garlic powder. Whisk until smooth. Set aside.
- When the pasta is done, mix it all together. Mangia!

- 1. In a large skillet, brown hamburger, sausage, onion, and garlic over a medium heat.
- 2. Season to taste with oregano, salt, and pepper; drain excess fat.
- 3. Meanwhile, steam the broccoli until tender yet still a little crisp; season with salt and pepper.
- 4. Place cream cheese in a microwaveable bowl and microwave on HIGH for about 45 seconds, until soft. Whisk until creamy and smooth.
- 5. Gradually whisk in the cream until smooth; stir in the Parmesan cheese.
- 6. Combine hamburger, broccoli and cream sauce in a large greased casserole dish (2 ½ quart or larger). Taste test and add additional salt, and pepper if desired.
- 7. Top with shredded cheese.
- 8. Bake at 350º for about 35-45 minutes, until bubbly around edges.
THM ALFREDO BEEF AND BROCCOLI - S

- Brown 3 lbs. ground beef in a large skillet and drain off fat if not using grass fed beef. Season beef with salt and pepper or Creole seasoning. Add 2 packets frozen broccoli florets to cooked beef. Put lid on skillet and let steam broccoli until almost tender, stirring every now and then. If you thaw broccoli before placing in skillet, it will only take about 5 minutes. Once broccoli is on its way to tender, add 11⁄2 jars of Alfredo sauce, or the same amount of homemade Alfredo sauce, plus 1 cup of water. Stir water and sauce into other ingredients and heat, but don't cook so long that the broccoli is over cooked. For spice lovers, add cayenne pepper and Creole seasoning to give a wonderful kick.
