The compound butter can have anything you like, fresh herbs are kinder and more forgiving than dried ones. The citrus to stuff the chicken in can be lemons, oranges, or even limes whatever you like.

Steps:

  • 1. Rinse chicken and remove giblets. At this point I put the giblets in a small sauce pot, add water, and use the giblets and juice for dressing.
  • 2. In the cavity of the chicken stuff the stuffing ingredients.
  • 3. Make the compound butter by combining all compound butter ingredients.
  • 4. Run your hand under the skin of the chicken all over the breast portion to loosen it enough to get the butter under it. I use gloves for this part.
  • 5. Divide the compound butter up in portions that you like, I usually use a fourth. Insert the butter with your hand, then smash the skin a little to spread the butter out.
  • 6. Bake the chicken in a pre heated 350° until it tests done, and is golden and crispy. this cooked for 1 hour 45 minutes and was pefect.
  • 7. let chicken sit for 10 minutes before carving to give juices a chance to redistribute.

1 whole chicken
compound butter ingredients:
1 Tbsp fresh rosemary,chopped
4 Tbsp butter, softened
1/4 tsp each salt, pepper, and crushed red pepper

Steps:

  • Prepare the compound butter: Using a fine zester, grate the zest off the lemons, grapefruit and orange. Reserve the citrus for the marinade. Add the zest to a mixing bowl with the butter, Fresno chile, minced shallot, chives, 1 teaspoon salt and a sprinkle of freshly ground black pepper. Mix together well and set aside.
  • Marinate the chicken: Slice the citrus into 1/4-inch rounds and add to a large baking dish with the garlic, orange juice, olive oil, Dijon, vinegar, 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Mix well to combine. Add the chicken breasts and toss well to coat, using your hands or tongs to squash the citrus and massage it into the chicken. Cover and refrigerate for 45 minutes.
  • Heat a grill to medium-high. Preheat the oven to 350 degrees F.
  • Remove the chicken from the fridge and allow to come to room temperature. Remove from the marinade and discard. Season the breasts on both sides with salt and 4 to 5 turns of freshly ground black pepper. Place the chicken skin-side down on the grill, and cook for about 2 minutes. Rotate 90 degrees and cook for another 2 minutes; this creates nice cross-hatch sear marks on the chicken. Turn the chicken breasts over and repeat the same cooking process on the second side.
  • Once the chicken is marked off, place it on a baking sheet skin-side up. Brush the top of the chicken liberally with the citrus compound butter. Finish cooking in the oven until cooked through, 20 to 25 minutes. Allow to rest for 4 to 5 minutes. Slice the breasts by removing the meat from the bone and cutting into thick slices (or serve whole individual portions). Top with a small spoonful of remaining compound butter so it melts into chicken as it is served.

2 lemons
1 large pink grapefruit
1 orange
2 sticks (1 cup) unsalted butter, at room temperature
1 Fresno chile, seeded and minced
1 shallot, minced
2 tablespoons finely sliced fresh chives
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
2 cups fresh orange juice
1/4 cup extra-virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons seasoned rice vinegar
Four 10-ounce bone-in, skin on chicken breasts

Hurricanes by the Pitcher image

Steps:

  • Use a vegetable peeler to remove 2 long strips of lemon peel, being careful not to take any of the white pith, which can be bitter. Juice the lemons; you should have 1 1/4 cups of juice.
  • Put the lemon peel, sugar, 1 cup of the lemon juice and 1/2 cup water in a small saucepan. Bring to a simmer over medium-high heat and cook, stirring, until the sugar has dissolved. Remove from heat and let cool. Discard the lemon peel.
  • Put the orange and lime slices in a large pitcher (or a clean stock pot if you are making an extra-large batch for family and friends). Using a wooden spoon or muddler, lightly bruise the citrus to release some of the juices and essential oils from the skins.
  • Stir in the orange juice, coconut water, dark and light rum, grenadine, pineapple juice, the remaining 1/4 cup lemon juice and 1 cup of the lemon syrup. (The remaining syrup can be refrigerated in a covered container for up to 1 week.)
  • Thread an orange slice, a lime slice and a maraschino cherry onto each of 8 small skewers. Fill 8 glasses with ice. Pour the hurricanes over the ice and rest a fruit skewer on each glass. Serve with tall bendy straws.

5 large lemons
1 1/2 cups sugar
1 orange, sliced 1/4 inch thick, plus more for garnish
1 lime, halved lengthwise and sliced 1/4 inch thick, plus more for garnish
1 1/2 cups pulp-free orange juice
1 cup coconut water
1 cup dark rum
1 cup light rum
3/4 cup grenadine
3/4 cup pineapple juice
Maraschino cherries, for garnish

Steps:

  • Preheat the oven to 425 degrees F. Place a large skillet or roasting pan in the oven to preheat while you prepare the chicken.
  • Begin by preparing a lemon butter. Place 4 tablespoons of the butter in a mixing bowl and add about 1 teaspoon of zest from the lemons. Season with salt and pepper and mix well.
  • Flatten the chicken by cutting out the backbone and flattening the breast by firmly pressing with the heel of your hand. Sprinkle both sides of the chicken with salt and pepper. Using your fingers, loosely separate the skin from the breast and thighs. Smear the lemon butter evenly in the cavity between the skin and meat, ensuring it is worked evenly over the bird. With the skin side facing up, drizzle olive oil over the chicken.
  • Remove the preheated pan from the oven and place the chicken in the pan, skin-side down.
  • Place the lemon slices over the bird along with fennel, onions, garlic, thyme and oregano. As it cooks, this will flavor the bird.
  • Place in the oven and roast for 30 minutes. Remove from the oven, flip the chicken to skin-side up and add half the wine to the pan. Return to the oven and roast until an instant-read thermometer inserted into the joint between the leg and thigh registers 165 degrees F, approximately 30 minutes longer. When the chicken is done, remove from the pan to a serving platter and allow to rest for 15 minutes before carving and plating.
  • Meanwhile, make a pan sauce. Place the chicken pan over medium-high heat and add the remaining butter and wine. Stir until the butter is melted and the sauce thickens slightly. Pour the pan sauce over the platter of chicken. Serve immediately.

6 tablespoons butter, at room temperature
2 lemons, zested and sliced into 1/4-inch rounds
Kosher salt and freshly cracked black pepper
One 4 to 5-pound chicken (organic and free range, if possible)
Extra-virgin olive oil, for drizzling
1/2 fennel, bulb sliced and fronds cut into 2-inch lengths
1/2 fennel, bulb sliced and fronds cut into 2-inch lengths
1 onion, sliced
4 cloves garlic
3 sprigs fresh thyme
2 to 3 sprigs fresh oregano
3/4 cup dry white wine

Steps:

  • Rub the marinade all over the chicken, inside and out. Place in a bowl, cover and refrigerate at least 1 hour or as long as overnight.
  • Preheat oven to 400 degrees.
  • Lift the chicken from the marinade and place on a work surface. Cut the onion, head of garlic and orange in half and stuff inside the chicken's cavity. Tie the legs together and place on a rack in a roasting pan, breast side down.
  • Roast 20 minutes, then reduce the heat to 350 degrees and roast 20 minutes longer. Turn the chicken, breast side up, and bake 40 to 50 minutes longer, basting occasionally with the pan juices, until a drumstick feels loose when jiggled and the skin is golden brown. Remove from the oven and let sit 10 minutes before serving. Serve warm with rice and beans.

TRIPLE CITRUS CHICKEN BREASTS

Impera_Magna led me to this recipe when I was looking for a citrus chicken dish like one I'd had at a Thai restaurant. While this was nothing like the restaurant dish, it was very tasty and the family loved it! The recipe is from Nikibone.com, which has many recipes that look worth trying! I have not browsed the rest of the site. Cooking time includes two hours of marinating time.

Steps:

  • Between two layers of plastic wrap, pound chicken breasts with meat mallet to an even thickness of about 1/2 inch. Place chicken in large, self sealing plastic bag.
  • In a medium bowl, whisk together lemon zest, orange zest, garlic, chives, salt, pepper, lime juice, lemon juice, honey and balsamic vinegar.
  • Pour into bag, over chicken. Close bag securely and turn to distribute marinade.
  • Refrigerate at least 2 hours or as long as 24 hours, turning occasionally.
  • Remove chicken from bag. Shake excess marinade into bag and reserve.
  • In large, heavy, nonstick skillet over high heat, warm oil.
  • Saute chicken until browned, about 2 to 3 minutes per side.
  • Lower heat to medium and continue cooking until chicken is done, about 2 more minutes per side.
  • Transfer to serving platter and cover to keep warm.
  • Pour reserved marinade into skillet and bring to a boil over high heat. Scrape the bottom of pan with a wooden spoon to loosen any browned bits.
  • Add any liquid that has collected around chicken and let mixture boil for 2 minutes, until slightly thickened and reduced.
  • Stir in cream; cook for another minute. Pour hot sauce over chicken breasts.
  • Garnish with slices of lime, lemon or orange. Serve with rice or couscous, a green salad or vegetable and sliced mangoes for dessert.

CITRUS CHICKEN

This take on the humble chicken breast yields a dish that is at once crisp and moist, tangy and sweet. You can use bone-in chicken breasts, but you'll need to adjust your cooking time by a few minutes.

Steps:

  • Put a large skillet over medium-high heat for 2 or 3 minutes. Add olive oil and butter to the skillet and swirl it around.
  • Season the chicken with salt and pepper. Put flour on a plate. When the butter foam subsides in the pan, dredge the chicken in flour, shaking to remove the excess.
  • Add the breasts to the skillet and cook, turning once, until the chicken is browned on both sides and nearly cooked through, about 5 minutes per side. (Chicken should be constantly sizzling but not burning.) Transfer the chicken to a plate and cover loosely with foil to keep warm.
  • Cut the orange in half. Section one of the halves as you would a grapefruit, removing any seeds. Juice the remaining orange half and one lime.
  • With the heat still on medium-high, add the orange juice, lime juice and sugar to the skillet and let it bubble, stirring, until it is reduced by half, about 2 minutes.
  • Add the orange sections to the skillet and turn heat to low, stirring, until mixture is slightly thickened.
  • Return the chicken to the skillet, turn it in the sauce, then serve, seasoned with salt and pepper to taste. Cut the remaining lime into wedges for garnish.
