BAKED TILAPIA WITH VEGGIES IN FOIL
Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Create aluminum foil packets for each fillet. Place fish into the individual foil packets and place carrots and celery on top of each fillet. Divide vermouth and butter evenly between each pouch. Seal each foil packet and place on a baking sheet.
- Bake in the preheated oven until fish fillets flake easily with a fork, 15 to 20 minutes.

BAKED WRAPPED TILAPIA
My friend got this recipe off of Epicurious where it is touted as Tori Amos' favorite recipe. It is certainly popular with our husbands. It has a spicy sweetness to it. We live in too small of a town to find banana leaves so it is parchment paper for us. Coconut rice.makes a nice accompaniment.

Steps:
- Preheat oven to 400°F
- Combine all topping ingredients in a bowl.
- Season with salt and pepper to taste.
- Place a fillet on each banana leaf and divide topping evenly among them, spreading it over the top.
- Fold each banana leaf over to form a packet around each fillet and seal the edge of each packet with a small piece of aluminum foil, crimping it tightly. Place on a baking sheet and bake 25 to 30 minutes.

- Combine all ingredients in a bowl. Season with salt and pepper to taste. Mix thoroughly.
- Place a fillet on each banana leaf or a piece of parchment paper and divide mixture evenly amongst them, spreading the mixture over the top of each fillet.
- Fold each banana leaf, or the paper, over to form a packet around each fillet and seal the edge of each packet with a small piece of aluminum foil, crimping it tightly.
- Place on a baking sheet in the middle of the oven and bake for 25 to 30 minutes.
- Remove from oven and the wrapping. Lightly brush off most of the topping and sprinkle a few slivered almonds on top of each fillet for garnish if desired.
- Serve with stir-fried Chinese vegetables.
