TIRAMISU (WEIGHT WATCHERS)

No it isn't the real thing but it is a wonderful low calorie version. This is one of my "go to" recipes for entertaining.

Tiramisu (Weight Watchers) image

Steps:

  • Using a serrated knife, cut angel food cake into 12 equal slices; set aside.
  • In a mixing bowl or food processor, combine both cream cheeses, sugar and vanilla. Mix until blended and smooth. Combine cocoa and grated chocolate in a separate bowl; set aside. Pour espresso into a shallow dish.
  • Dip 4 cake slices into espresso mixture and turn to coat. Place slices crosswise in bottom of an 8-inch loaf pan and press cake down to coat bottom (break up cake if necessary to coat surface).
  • Gently spread 1/3 cream cheese mixture over cake layer. Sprinkle with 1/3 cocoa mixture. Repeat procedure with remaining cake slices, cream cheese mixture and cocoa mixture to make 3 layers.
  • Refrigerate 2 hours. Cut into 8 pieces and serve.

Steps:

  • 2. In a mixing bowl or food processor, combine both cheeses, whipped topping, sugar and vanilla. Microwave for 30 seconds. Mix until blended and smooth. Combine cocoa and grated chocolate in a separate bowl; set aside. Pour coffee and brandy flavoring into a shallow dish.
  • 3. Dip 4 cake slices into coffee mixture and turn to coat. Place slices crosswise in bottom of an 8-inch loaf pan and press cake down to coat bottom (break up cake if necessary to coat surface).
  • 4. Gently spread 1/3 cheese mixture over cake layer. Sprinkle with 1/3 cocoa mixture. Repeat procedure with remaining cake slices, cream cheese mixture and cocoa mixture to make 3 layers.
  • 5. Refrigerate 2 hours.

4 ounces fat free cream cheese or 4 ounces tofutti better-than-cream-cheese
4 ounces fat-free whipped topping
4 ounces mascarpone cheese (Trader Joe's)
1/3 cup sugar
1 teaspoon vanilla extract
2 tablespoons unsweetened cocoa
1 ounce semisweet chocolate, finely grated (food processor)
12 fluid ounces extra strong herbal mocha-flavored coffee
4 teaspoons brandy flavoring (in the coffee)

TIRAMISU 5 WW POINTS

5 WW points for THE WHOLE THING! Tiramisu is my favorite thing on earth, so I am excited to try this. I do intend to spike mine with 1oz of Kahlua or rum or Amaretto or even Grand Marnier. I'm also considering using Quark instead of the ricotta. Be sure to sweeten the espresso with a little splenda.

Steps:

  • Begin by lining up half of the ladyfingers next to each other on a serving dish. Drizzle cooled coffee over ladyfingers until desired saturation is reached.
  • In a bowl, combine cheese, Splenda, Cool Whip and vanilla, and mix well. Spread half of this mixture on top of ladyfingers and top with half of the cocoa. Next, layer remaining ladyfingers on top of dish. Again, cover with coffee. Spread remaining cheese mixture on top. Lastly, sprinkle cocoa over dish.
  • Best when eaten immediately. Serves one or two, depending on how hungry you are.

  • Beat together the cheeses, sugar and vanilla extract until smooth. In a small bowl mix together the cocoa and chocolate and reserve 1 tbsp of the mixture for decoration.
  • Add the coffee to the 200ml of boiling water in a shallow bowl. Line a 900g (2lb) loaf tin with clingfilm so that it hangs over the edges.
  • Dip 4 pieces of sponge into the coffee and lay along the bottom of the tin. Spread a third of the cheese mixture over the top and sprinkle a third of the chocolate mixture over the cheese. Repeat with remaining sponge, cheese and chocolate ending with a layer of sponge. Fold over the clingfilm and chill for at least 2 hours or overnight.
  • To serve, tip out the tiramisu, carefully remove the clingfilm and sprinkle with reserved chocolate mixture.
