Toffee Crunch Cookies image

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together the butter, sugar and vanilla. Beat the eggs slightly; then add to the butter mixture and mix well. Sift flour, salt and baking soda; then add slowly to the moist ingredients and mix thoroughly. Mix in the toffee bits, oatmeal, coconut and nuts.
  • Drop dough by the teaspoonful onto an ungreased baking sheet and bake for 15 minutes.

1 cup (2 sticks) butter
1 cup light brown sugar
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 (10-ounce) bag toffee candy bits
1 cup oatmeal
1 cup sweetened flake coconut
1 cup chopped whole, skinned almonds

Steps:

  • Heat oven to 350°F.
  • Line a cookie sheet with foil.
  • Arrange crackers snugly in a single layer, filling the sheet completely, about 40 crackers.
  • In a saucepan, melt the butter over medium-low heat.
  • Add the brown sugar and mix well.
  • Pour the butter mixture evenly over crackers, spreading as necessary.
  • Bake 8-10 minutes, or until the butter is bubbly.
  • Remove the sheet from the oven and sprinkle chocolate chips over the crackers.
  • When the chips have softened, spread them over the crackers with a knife.
  • Sprinkle immediately with the nuts.
  • Let the cookies cool 5-10 minutes before cutting between the individual cookies with a spatula.
  • Remove them to a plate, keeping them in a single layer.
  • If you don't remove them while they are still warm, they will stick to the foil.

1 (16 ounce) box saltine crackers, you won't need the whole box

Saltine Cracker Brickle image

Steps:

  • Heat oven to 350 degrees. Line a sheet pan or large cookie sheet with sides with heavy-duty aluminum foil. Arrange the crackers side by side in a single layer on the foil. In a small saucepan, melt the sugar and butter, stirring constantly until they bubble, about 2 to 3 minutes. Remove from heat and quickly stir in the vanilla. Pour evenly over the crackers and, using a spatula, spread to cover evenly.
  • Bake immediately. After 7 minutes, remove the pan from the oven and sprinkle the chocolate chips evenly over the crackers. Return to the top rack of the oven and bake for 2 minutes more. Spread the chocolate evenly over the crackers with a clean spatula. Cool for 20 to 30 minutes before transferring the tray to the freezer. The next day, peel off the foil and break the brickle into pieces. Keep frozen or refrigerated.

  • Preheat the oven to 350 degrees F (180 degrees C).
  • In a large bowl, combine the cake mix, oil, and eggs Beat with an electric beater for 3 to 4 minutes, until well blended. With a spoon, stir in the chopped candy.
  • Drop by teaspoonfuls 2 inches apart on to cookie sheets that have been coated with nonstick baking spray. Bake for 9 to 11 minutes, or until the cookies are firm. Remove the cookies to a wire rack to cool completely.

Almond Toffee Cracker Cookies image

Steps:

  • 1. Spread crackers touching each other in a single layer on a rimmed baking sheet. OK to break some in order to completely fill the baking sheet.
  • 2. Melt butter and sugar together in saucepan on medium-high heat until mixture comes to a full-rolling boil. Lower heat to medium and continue to cook for 3 more minutes, stirring occasionally.
  • 3. Remove from heat and stir in vanilla. Stir in almonds. Pour mixture evenly over crackers. Caramel will even out completely as it bakes. Bake at 350 for about 7-8 minutes or until it looks "dry". Check often to make sure that the crackers on the edges don't burn. Cool and break apart.

Steps:

  • Preheat oven to 300.
  • In large bowl, beat butter with an electric mixer on medium-high speed for 30 seconds. Add brown sugar, baking powder and salt. Beat until combined. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with mixer and then combine the rest with a spoon. Stir in toffee pieces.
  • Shape dough into 1 1/4 inch balls. Roll in granulated sugar.
  • Place 2 inches apart on ungreased cookie sheet and flatten slightly with bottom of a glass.
  • Bake about 20 minutes or until edges are firm, but not brown.
  • Cool completely on wire rack.

  • Preheat the oven to 350°F. Line a rimmed baking sheet with heavy duty aluminum foil, making sure the foil goes up and over the edges, and top with a sheet of parchment paper.
  • Cover the baking sheet with the matzos, cutting and piecing them together as necessary to fill the entire pan.
  • Make the toffee: Combine butter and brown sugar in a medium saucepan. Cook over medium heat, stirring constantly with a whisk, until the mixture comes to a boil. (If it looks like it’s separating, just keep stirring; it will come together.) Once the mixture comes to a boil, continue cooking and stirring for another 3 minutes until foamy and thickened. (Be extra careful -- the toffee will be very hot!) Immediately pour the toffee over the matzos and, using a spatula, spread into an even layer.
  • Put the pan into the oven and bake for 8 to 10 minutes, or until the toffee topping is crackled and bubbling all over. Remove the pan from the oven and place on wire cooling rack on the counter. Immediately scatter the chocolate chips evenly over top. Wait 3 to 5 minutes for the chips to soften, then use an offset spatula to spread the chocolate into an even layer. Sprinkle with the pecans and sea salt. Refrigerate until the chocolate is firm, about 45 minutes. Don't leave it in the fridge too much longer, otherwise it will be hard to cut.
