Mediterranean Pasta with Artichokes, Olives, and Tomatoes image

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente according to package directions. Drain, reserving 1 cup of pasta water. Return pasta to pot.
  • Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high. Add onion and garlic, season with salt and pepper, cook, stirring occasionally until browned, 3 to 4 minutes. Add wine and cook until evaporated, about 2 minutes.
  • Stir in artichokes and cook until starting to brown, 2 to 3 minutes. Add olives and half of the tomatoes; cook until tomatoes start to break down, 1 to 2 minutes. Add pasta to skillet. Stir in remaining tomatoes, oil, cheese, and basil. Thin with reserved pasta water if necessary to coat the spaghetti. Serve with additional cheese.

Chicken with Heirloom Tomatoes, Artichokes, and Rosemary image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Coat chicken breasts with 1/2 tablespoon olive oil and season with salt and pepper. Arrange chicken breasts in a large baking dish.
  • Bake in the preheated oven until opaque, about 12 minutes.
  • Meanwhile, gently mash 1 cup tomatoes. Combine with remaining tomatoes, remaining olive oil, artichokes, rosemary sprigs, salt, and red pepper flakes.
  • Flip chicken breasts and cover with tomato mixture. Continue baking until chicken is no longer pink in the center, about 12 minutes more.
  • Place olives on a cutting board and use a rolling pin to break them into irregular pieces. Plate chicken breasts with tomato mixture; drizzle lemon juice on top. Garnish with rosemary sprigs and cracked olives.

Steps:

  • Cut tomatoes into large chunks; remove seeds. Put one-fourth of the tomatoes, oregano, parsley, garlic, basil, olive oil and black pepper in food processor or blender and blend until smooth. Set aside and repeat until all ingredients are used; combine and either set aside or refrigerate several hours or overnight.
  • Cook rotini according to package instructions until al dente in one or two pots of boiling water. Drain and serve while piping hot, with sauce either at room temperature or cold.
  • Pass the cheese around.

Steps:

  • Add all ingredients except for pasta and cheese to a slow-cooker.
  • Cover and cook on LOW for 8-9 hours.
  • Add in pasta; stir.
  • Increase setting to HIGH; cover and cook 15-20 minutes or until pasta is tender; season with more salt/pepper if desired.

Steps:

  • Cook pasta for 10 minutes.
  • While pasta is cooking, heat half of the olive oil over medium-high heat.
  • When pan starts to smoke, saute the shallot for 1 min.
  • Add the artichoke slices and brown until golden.
  • Add the thyme and wine and cover the pan, letting the liquid almost evaporate.
  • Just before adding the pasta, quickly saute the cherry tomatoes for 1 min.
  • just so they release their juices.
  • Add the hot pasta to the pan along with the rest of the olive oil, salt and pepper.
