TOMATO BACON BON BONS WITH BACON TAZIKI SAUCE
There is bacon in every layer of this recipe. A bacon lovers dream recipe! The Taziki sauce really adds a great level of taste. These will be such a great appetizer at your next party.

Steps:
- First you will take this step by step, take the grape tomatoes and core out the center, once done set them aside, take the cream cheese and whip in the bacon bits, you're looking for a rich bacon flavored cream cheese, make sure this is whipped to the point of frosting,
- Now take a piping bag with a small tip, or a Ziploc bag with the corner cut out, fill the bag with the cream cheese mix and stuff the tomato with the mixture until it's full, once your done, set in fridge.
- Now take sausage and raw bacon and mix together with the Asiago cheese, take a small amount and wrap the sausage mix around the stuffed tomato, just like a scotch egg.
- Once all tomatoes are stuffed and wrapped with the meat mixture, set them aside and start the breading set up, in one bowl add the milk and eggs and whip till blended, second bowl is going to be bread crumbs and third bowl will be your stuffed bacon pork wrapped tomato.
- Now once everything is ready, you need to do the sauce, take salsa, ranch and 1 cup of bacon bits and load into food processor along with one cup of diced English cucumber, it should look red but also light.
- Heat a med sized heavy duty pan up with three cups of grease with a candy thermometer to 300 deg, now take one of the bacon stuffed tomatoes, and dip them into egg first, then bread all over, now take them and dip them into hot grease and fry till golden brown, 6 to 8 min each.
- Place each bon bon on a grate to drain the grease off, when there all ready drained, take and place on favorite dish, for the sauce, serve in a bowl on the side or spoon sauce over top or if you have a Chinese spoon set, put sauce in bottom and a tomato bon bon on top and bon appetite!
SPICY, CREAMY, TOMATO ,BACON PASTA SAUCE
I made this last night from things in the pantry and fridge. I guess it's based loosely on Alamatriciana, though that has crisp bacon and no cream or herbs!

Steps:
- Heat the oil in a heavy based fry pan over medium heat.
- Add the onion and cook for about 5 minutes, add the bacon and garlic, and cook for a further 5 minutes or until the bacon is cooked to your liking.
- Pour in the wine, and allow to cook and reduce for a couple of minutes, then add the chilli flakes, tomato sauce, water and stock powder.
- Simmer for about 15 minutes.
- Add the cream and fresh chopped herbs and freshly ground black pepper, reheat and serve immediately over the pasta of your choice.
- We ate this last night over spinach and cheese tortellini.

- Fry the bacon until very crisp.
- Reserve and measure the drippings - you will need 2 or 3 ounces of melted fat.
- Set the bacon aside and crumble 3 rashers when it is cool.
- In a medium saucepan over medium heat, sauté the onions, stirring often, until they are all quite brown or are turning black.
- In the meantime, pour the water, honey and vinegar into a bowl.
- Mix thoroughly with a whisk.
- Add cornstarch and whisk thoroughly again.
- Add tomato paste and whisk thoroughly again.
- Add the mustard to the onions and gently but thoroughly mix together.
- Now pour the water, vinegar, honey, cornstarch and tomato paste melange into the saucepan with the mustard and onions.
- Add the crumbled bacon and optional hot sauce.
- Stir constantly over medium-high heat until thickening and boiling.
- Refrigerate in a tightly sealed container.
FRESH TOMATO SAUCE WITH ROSEMARY AND BACON
Pancetta can be substituted for the bacon. Any short tubular pasta is well suited to this sauce. If your tomatoes are tart, you may need to add up to 1/2 teaspoon sugar. From a back issue of Cooks Illustrated.

- Cook bacon in 10-inch skillet over medium heat, stirring occasionally, until crisp, 8 to 10 minutes. Using slotted spoon, transfer bacon to paper-towel-lined plate. Pour off bacon fat from pan and discard.
- Return skillet to medium-high heat. Add oil, swirl to coat pan, and add garlic, rosemary, and pepper flakes. Cook, stirring constantly, until garlic is fragrant but not browned, about 30 seconds.
- Stir in tomatoes and cook until tomato pieces lose their shape to form chunky sauce, about 10 minutes.
- Stir in parsley, salt, pepper, and sugar to taste.
- Toss sauce with pasta and serve, sprinkling Parmesan and reserved bacon over individual bowls.

BACON, ONION, GARLIC & TOMATO SAUCE
This recipe is something I created the other night for some friends and they loved it. It is probably your "Doctor's Worst Nightmare" kind of recipe, but try it and indulge yourself now and again.

Steps:
- Cut bacon slices into 4 pieces and cook over medium heat in a large sauce pan. You may have to do this in 2 batches.
- Cook bacon until a golden brown, but NOT crispy. You do not want any burnt edges.
- Remove bacon and place on paper towels to absorb fat.
- Add roughly diced onions and cook on medium heat until translucent.
- Add your garlic and continue cooking until onions appear to start turning golden brown.
- Strain mixture with a sieve over a bowl, as you want to reverse the bacon fat.
- Put mixture back into pan and add a half of the diced tomatoes.
- Cook, toss and turn for about 5 minutes.
- Return bacon and bacon fat back into mixture and heat through.
- Pour over your favourite pasta and sprinkle with cheese and fresh basil leaves.
