CAPRESE CHICKEN ROLLUPS RECIPE BY TASTY
Here's what you need: boneless, skinless chicken breasts, olive oil, salt, pepper, mozzarella cheese, tomato, tomato, fresh basil, balsamic vinegar, honey

Steps:
- Preheat oven to 400˚F (200˚C).
- In a saucepan, heat balsamic vinegar and honey over high heat. Stir until sauce reduces to ⅓ cup (80 ml). Set aside.
- On a cutting board, slice the chicken breasts in half horizontally.
- Cover chicken with a piece of plastic wrap. Using the rough side of a metal mallet, pound the chicken until ½-inch (1 cm) thick. Repeat with remaining breasts.
- Drizzle olive oil over pieces of chicken and season with salt and pepper.
- Place 2 slices of mozzarella on each piece of chicken. Spoon ¼ cup (50 g) of diced tomatoes on each piece of chicken. Place 3 pieces of basil on each piece of chicken.
- Roll up the chicken, making sure the ingredients are tucked under the breast and not pushed out the sides.
- Place the roll-ups in a greased baking dish. Drizzle each roll-up with more olive oil and sprinkle with salt and pepper.
- Bake for 15 to 20 minutes, until internal temperature reaches 160˚F (71˚C).
- Place one slice of mozzarella on each roll-up. Broil for 5 to 10 minutes until the mozzarella has melted over the chicken.
- Let chicken rest for 10 minutes. Place a basil leaf and slice of tomato on each piece of chicken. Drizzle with balsamic reduction.

EGGPLANT, TOMATO AND BASIL ROLL-UPS

- Trim the ends from the eggplant and slice lengthwise 1/8-inch thick.
- Place each eggplant slice on a lightly sprayed saute pan over medium low heat to slightly toast. The eggplant should be moist and pliable. Keep the saute pan warm.
- Slice the tomatoes 1/8-inch thick.
- Lay the eggplant slices flat and lay a tomato slice at the bottom and place a basil leaf on top of the tomato. Grind some fresh pepper over the basil/tomato. Combine the cheeses and sprinkle a teaspoon of the cheeses and a pinch of the chile on top of the basil leaf.
- Roll-up the eggplant/tomato lengthwise and place seam side down in the warmed saute pan. Repeat until all the eggplant are rolled up. Bring the heat up to medium and slightly sear the roll-ups. Turn to brown all sides.

- Dissolve yeast and sugar in warm milk. In a large bowl, beat egg, tomato paste, oil, salt, yeast mixture and 1 cup flour on medium speed until smooth. I only had a few ingredients in my fridge, and this recipe came to mind. However, it turned out pretty awesome and very Italian. I found that the cheese and tomatoes on top keep the meat very tender and moist. And the roasted tomatoes, mmmmm. Also, I suggest serving it with some roasted cauliflower.

- Preheat Oven to 350F (175C).
- Mix the olive oil, vinegar, garlic, pepper and salt, and rub the chicken breasts with them. You can also let it marinate for a few hours or overnight.
- Lay the chicken breasts on a non stick oven pan. Place half of the basil on top of the chicken, then add the cheese on top of that.
- Slice the tomato into half moons and layer it on the top. Sprinkle the rest of the basil on.
