TOMATO-BRAISED FISH WTH FETA AND LEMON
From the "Pantry to Table" cookbook. Cookbook Swap, fall 2008. I love feta and love fish so this ought to be a great dish. For lower points/calories used fat free feta. (me I want the real stuff) 4 points.less points with fat free feta. edited to add drain the tomatoes as stated from the chefs reviews.

Steps:
- Heat oil in large nonstick skillet over med heat.
- Add onions and garlic and cook, stirring frequently, until onions are softened, about 4 minute.
- Add the tomatoes and zest:cook, stirring until heated through, about 3 minute.
- Sprinkle fish with salt, place in skillet, and spoon some of the tomato mixture overthe top.
- Cover the skillet and cook until fish is opaque in center (6-8 min). Sprinkle with crumbled feta and lemon wedges.

- Sprinkle fillets with seasoned salt; drizzle with lemon juice. In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add tomatoes, peppers, broth, tomato paste, garlic powder and oregano; cook and stir 2-3 minutes longer., Place fillets over tomato mixture; cook, covered, 6-8 minutes or until fish flakes easily with a fork. - Prepare Braising Liquid:Pour the oil, wine, and water into a large (13-inch) skillet, then add the fennel, tomatoes, garlic, and lemon slices. Season with salt and pepper. Cover and bring to a boil over high heat, then simmer over moderate heat until the tomatoes begin to fall apart and the fennel softens, 12 to 15 minutes.

- Serve:Spoon some of the braising sauce into a shallow bowl, then top with fish. Drizzle with olive oil, and sprinkle with pepper.

If you want to add more fish to your diet, here's an easy way to start. When you are baking fish, choose a thicker fish fillet (more like COD, tilapia is too thin). Total baking time will be very dependent on the thickness of the fillet, so if you notice that the fish is splitting apart, it is done!

- Pat thawed fish with paper towels to remove excess moisture. Place fillets in a glass baking dish (spray dish with non-stick spray).
- Place 2 tomato slices on each fish fillet.

- Heat the oven to 400 degrees. Place the tomatoes, shallots and garlic in a 9-by-13-inch nonreactive baking dish. In a small bowl, whisk together the olive oil, vinegar, honey, salt and pepper. Pour over the tomatoes and toss to combine. Roast until the tomatoes have collapsed and the shallots are translucent, about 15 minutes.
- While the tomatoes roast, pat the fish dry with paper towels, brush all over with olive oil, and season generously with salt and pepper.
- Toss the tomatoes, move them to the sides of the dish and place the fish fillets, evenly spaced, in the center. Roast until the fish is cooked through and flakes easily with a fork, 10 to 12 minutes.

SHEET-PAN BAKED FETA WITH BROCCOLINI, TOMATOES AND LEMON
When baked, feta gains an almost creamy texture, similar to goat cheese but with feta's characteristic tang. In this easy vegetarian sheet-pan dinner, broccolini (or broccoli), grape tomatoes and lemon slices roast alongside the feta until the broccolini crisp, the tomatoes burst and the lemon rinds soften. (Remember, broccolini has a tender, delicious stalk so only the bottom 1/2-inch needs to be trimmed.) Serve this dish over a pile of orzo for a complete meal. If you like, cut the broccolini, feta and lemon into bite-size pieces and toss with the orzo.

- Heat the oven to 400 degrees with a rack set in the lower third. On a sheet pan, combine the broccolini, tomatoes, onion and lemon slices with the olive oil and toss.
