TOMATO, RICE, AND SAUSAGE SOUP

Tomato, Rice, and Sausage Soup image

Steps:

  • Heat oil in a 4-quart saucepan over medium-highuntil hot but not smoking. Cook sausage, stirring occasionally, until browned, 3 to 5 minutes. Add bell pepper, onion, celery, garlic, and thyme. Cook over medium-low, stirring occasionally, 10 minutes.
  • Add tomatoes, stock, and rice; bring to a boil. Reduce heat and simmer until rice is plump, about 20 minutes. Remove from heat. Stir in vinegar, and season with salt and pepper.

1 tablespoon safflower or other neutral-tasting oil
5 ounces andouille sausage, one-quarter cut into small dice, the rest into 1/4-inch-thick half-moons
1/2 red bell pepper, ribs and seeds removed, minced
1/2 yellow onion, minced
2 celery stalks, minced
1 garlic clove, thinly sliced
1 teaspoon fresh thyme, leaves
1 cup canned whole peeled tomatoes, pureed
4 cups chicken stock, homemade or low-sodium, store-bought
1/2 cup long-grain white rice
1/2 teaspoon apple cider or distilled white vinegar
Coarse salt and freshly ground pepper

Italian Sausage and Tomato Soup image

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir turkey sausage is browned, about 5 minutes. Add onion and garlic, cooking and stirring until onion is tender, about 5 minutes more. Season with Italian seasoning, salt, and black pepper. Stir in carrots; cook and stir until carrots start to soften, 5 to 7 minutes.
  • Pour beans, diced tomatoes, beef broth, chicken broth, and tomato sauce into turkey mixture. Stir in bay leaves. Continue to simmer until carrots are tender, about 5 minutes. Add rigatoni pasta; cook and stir until pasta is cooked through but firm to the bite, about 13 minutes.

This recipe makes a big batch. So I often divide leftovers into a few containers for "freezer meals".

Sausage Wild Rice Soup image

Steps:

  • In a large saucepan, bring 3 cups water to a boil. Stir in rice. Reduce heat; cover and simmer for 55-60 minutes or until tender., Meanwhile, in a stockpot, cook sausage over medium heat until no longer pink; drain. Remove and set aside. In the same pan, saute onions in oil until tender. Add garlic; cook 1 minute longer. Stir in the broth, tomatoes, tomato paste, basil, oregano and remaining water. Return sausage to the pan. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. , Stir in the spinach, salt, pepper and wild rice; heat through.

ITALIAN SAUSAGE, TOMATO AND WHITE BEAN SOUP

This was in AJC 30 minute challenge: only five ingredients and ready in 30 minutes. It said 4 servings, but next time will double for the 4 of us (I want leftovers). It was absolutely delicious. I used Turkey sausage. Plus I used 1/2 lb. turkey bacon as I only had 1/2 lb. sausage!

Italian Sausage, Tomato and White Bean Soup image

Steps:

  • In stock pot over medium heat, crumble sausage and cook until no longer pink. If necessary, drain all but 1 tablespoon fat.
  • Add onion and saute until softened.
  • Add chicken broth, cannellini beans and tomatoes.
  • Stir to combine.
  • Cover and simmer for 10 to 15 minutes or longer if you need to.
  • Enjoy a quick and easy but really delightful meal.
  • Serve with crusty bread and fruit salad; I had apples and grapes sprinkled with fresh lemon juice in refrigerator.

  • To a large Dutch oven or stockpot, add the optional olive oil , sausage, onion, red pepper, and cook over medium-high heat for about 5 minutes, or until onion is becoming soft and translucent. Stir and crumble the sausage as it cooks. I did not drain the sausage but you can if desired; the fat keeps the rice from sticking and adds flavor to the broth.
  • Add the broth, tomatoes, oregano, 1 teaspoon salt, pepper, optional cayenne (doesn’t make the soup spicy but adds flavor), bring to a boil, and once boiling, add the zucchini, green beans, rice, and cook uncovered for about 7 minutes or until the vegetables are crisp-tender.
  • Turn the heat off, add the basil, optionally add the lemon juice (it really brightens up the flavor of the soup and I recommend it), stir to combine, and taste the soup. If necessary, add more salt. Because I use lower/no salt-added products, I added a total of about 3 teaspoons salt but this will vary based on preference and products used; rice is also bland and benefits from adequate salt.
