TROPICAL OATMEAL COOKIES

Island flavors--macadamia nuts, coconut, and dried tropical fruits--provide an exciting change for basic oatmeal cookies.

Steps:

  • Heat oven to 375°F. Spray cookie sheets with nonstick cooking spray. In large bowl, combine sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and eggs; blend well. Add flour and baking soda; mix well. Stir in oats, coconut, nuts and dried fruits.
  • Drop dough by rounded tablespoonfuls 2 inches apart onto sprayed cookie sheets.
  • Bake at 375°F. for 7 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.

1 (7-oz.) pkg. diced dried tropical fruits and raisins

Steps:

  • In a large bowl, beat butter and shortening until soft and creamy. Gradually add sugars; mix well. Stir in egg and vanilla; set aside. In a separate bowl, mix flour, baking soda and salt. Gradually add flour mixture to butter mixture, blending well after each addition. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls onto lightly greased baking sheets. Bake at 350 degrees for 10 to 12 minutes, until golden. Cool on wire racks. Makes 3 dozen.

This was written a long time ago by my Dad, Bill York, then I tucked it away for years, found it among my cook book stuff and made it today - delicious! It deserves to be shared! These cookies don't spread like other cookies - they stay fat like little bombs - and they are the bomb! ;-)

Steps:

  • Sift or mix flour, sugar, soda and salt in large bowl.
  • In separate bowl, mix remaining ingredients.
  • Then mix both together.
  • Form dough into 1-inch balls and place 2 inches apart on un-greased cookie sheets.
  • Bake in oven at 325°F or 165°C for 15-18 minutes.

1 cup margarine or 1 cup vegetable oil
1 egg
1/2 teaspoon almond extract
1/2 teaspoon banana extract

  • n the bowl of stand mixer or using an electric mixer, cream the butter, sugars, and lime zest until light and fluffy. Scrape down the side of the bowl. Continue mixing while adding the eggs one at time. Make sure each egg is incorporated before adding the next. Add the vanilla. Scrape down the bowl with a spatula.
  • Combine the flour, soda and salt in another bowl. With a whisk, stir to combine. With the machine on low, slowly add the flour. Mix until just combined, taking care not to over mix. With a spatula fold in the white chocolate, macadamia nuts, and coconut flakes.
  • Bake at 360ºF for 12 minutes. They should be lightly golden on the outside but still look gooey on the inside.
