Steps:

  • 1. Heat Oven to 350. grease a baking sheet. or spray with cooking spray.
  • 2. Place Crushed Crackers in a bowl. Add Tuna or salmon Un-drained. egg whites, soy sauce and spices. Mix until well blended.
  • 3. Add; diced peppers stir well.
  • 4. Form into 6-8 patties, place on greased baking sheet.
  • 5. Bake; for about 8-10 min. turn over and bake another 8-10 min. serve with your favorite side dishes, lemon, or tartar sauce.

1 large can tuna or salmon (un-drained)
1 sleeve saltine crackers crushed
2 Tbs soy sauce
1/2 tsp garlic pdr
1/2 tsp onion pdr
4 tbs each, finely diced green yellow and red bell peppers

Steps:

  • In a large bowl, combine the tuna, 1/3 cup bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
  • Divide mixture into eight portions; shape into 2-inch balls.
  • Roll balls in remaining bread crumbs.
  • Flatten to 1/2 inch thickness.
  • In a large nonstick skillet, cook tuna cakes in butter for 3-4 minutes on each side or until golden brown.

1 cup seasoned bread crumbs, divided

  • In a large bowl, stir together tuna, egg, cilantro, breadcrumbs, mayonnaise, lemon juice, and jalapeno. Mix gently until ingredients just hold together.
  • Using a packed 1/3-cup measure of tuna mixture per patty, shape into 8 cakes.
  • In a large nonstick skillet, heat oil over medium. Working in batches if necessary, cook cakes until golden brown and crisp on the outside, about 2 minutes per side. Serve hot, accompanied by salsa, and garnish with cilantro sprigs.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine tuna, scallions, bread crumbs, egg, mustard, garlic powder, Sriracha, salt, and pepper in a bowl. Mix until the mixture sticks together. Divide into 6 equal portions and shape into patties.

Crispy Tuna Cakes with Lemon Chili Mayo image

Steps:

  • For the tuna cakes: Place the drained tuna in a large bowl. Add the bread or breadcrumbs, mustard, mayonnaise, lemon zest and juice, onion, parsley, garlic, seafood seasoning, salt and eggs. Toss until evenly combined. Let sit 5 to 10 minutes to let the ingredients absorb the liquid.
  • Meanwhile, make the lemon chili mayo: Whisk together the mayonnaise, lemon zest and juice, chili powder and cayenne in a small bowl. Set aside.
  • Heat 2 tablespoons of olive oil in a 10- to 12-inch heavy-bottomed nonstick or cast-iron skillet over medium heat.
  • Scoop out about 1/3 cup of the tuna mixture at a time and pat into a round patty shape in your hands, then immediately place it in the skillet. Repeat, working in batches so that you're cooking 3 to 4 tuna cakes at a time, spaced 1 to 2 inches apart.   • Drizzle 1 teaspoon of the olive oil into a large saute pan and bring over medium heat. Add the onion and celery and stir to coat in the oil. Cook, stirring occasionally, for a few minutes until the vegetables are softened. Stir in the minced garlic and cook for another 30-60 seconds until fragrant. Remove from heat.
  • In a mixing bowl, combine the eggs (beaten), the vegetable mix from step one, the drained tuna, ¼ cup of the breadcrumbs, ¼ cup of the Parmesan cheese, the mayonnaise, lemon juice, parsley flakes, salt, pepper, and dill. Stir together until well combined.
  • On a clean surface (I used a cutting mat), scoop out 9 (1/4 cup each) portions of the tuna mixture and flatten/shape them into patties. Combine the remaining ¼ cup of breadcrumbs and 2 tablespoons of Parmesan cheese in a dish and stir together. Sprinkle the crumb mixture over the patties on both sides and press it in to coat.
  • Wipe out the saute pan from step one to use again. Drizzle 1 tablespoon of oil into the pan and bring over medium heat. When the oil is hot, place half the patties (you’ll have to work in batches depending on the size of your pan, I did 5 the first batch and 4 the second) in the oil and cook for about 3 minutes until golden brown on the bottom. Flip the patties and cook for another 3 minutes or until golden. Transfer the cooked tuna cakes to a cooling rack and repeat with the remaining 2 teaspoons of oil and the remaining patties until all are cooked.
