Curry & Parmesan Tuna Salad image

Steps:

  • In a small bowl, combine the first 10 ingredients. Spread over two slices of bread. Top with remaining bread.

1 can (5 ounces) light water-packed tuna, drained
1/4 cup reduced-fat mayonnaise
1 tablespoon grated Parmesan cheese
1 tablespoon sweet pickle relish
1 tablespoon minced fresh parsley
1 teaspoon spicy brown mustard
1/4 teaspoon dill weed
1/8 teaspoon onion powder
1/8 teaspoon curry powder
1/8 teaspoon garlic powder
4 slices whole wheat bread

Curried Tuna Salad image

Steps:

  • In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
  • In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
  • Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
  • Yield: 3 to 4 servings

Two 6 ounce cans white meat tuna packed in water, drained
3 tablespoons minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon finely chopped fresh coriander (cilantro)
1 tablespoon golden raisins, plumped in 2 tablespoons warm water for 10 minutes, drained
2 teaspoons vegetable oil, like soy, peanut, or corn
2 teaspoons Madras-style curry powder
6 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
1/2 teaspoon freshly squeezed lime juice plus more to taste
Serving suggestions: 2 cups mixed lettuces or 3 to 4 pita breads

If you're looking for a change from traditional tuna sandwiches, try this recipe I developed. It includes my favorite ingredients from a few different tuna salad recipes, including apples, raisins and curry. The first time I combined them, I loved the results!

  • In a small bowl, combine the first five ingredients; add tuna and mix well. Spread rolls with additional mayonnaise if desired; top each with 1/2 cup tuna mixture and lettuce.

Steps:

  • thinly slice the onion,red and green peppers,discarding tht seeds from the pepper.
  • heat the oil in a karahi or wok and stirfry the cumin seeds for 2-3 minutes until they begin to spit and splutter.
  • add the ground cumin,coriander,chilli powder and salt and cook for 2-3 minutes.then add the garlic,onion and pepper.
  • fry the vegetables,stirring from time to time,for 5-7 minutes until the onion has light browned.
  • stir in the tuna,green chillies and ginger and cook for 5 minutes.
  • add the garam masala and lime juice and cook the curry for further 3-4 minutes.
  • serve warm with split pitta bread with cucumber raita.
