GRILLED HALIBUT

This is delicious, and I have made it many times since. We have used many types of fish as well as halibut, which I prefer.

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Stir butter, lemon juice, onion powder, parsley, dill, sugar, salt, and pepper together in a bowl; spread evenly over the halibut steaks.
  • Cook on preheated grill until the fish flakes easily with a fork, 5 to 6 minutes per side.

1 ½ teaspoons onion powder
1 ½ teaspoons dried parsley
¾ teaspoon dried dill weed

4 inch-thick halibut steaks

This recipe is adapted from Weber's Real Grilling cookbook. Posted for ZWT 6 2010. You can substitute any firm mild, white, thick fish fillet. Time indicated does not include one hour marinating time.

Steps:

  • Make the paste: in a small bowl, thoroughly mix all ingredients except halibut fillets.
  • Spread the paste evenly on both sides of the halibut fillets. Cover and refrigerate for 1 hour.
  • Grill over direct heat until the halibut just begins to flake when poked with the tip of a knife, about 6 - 8 minutes, turning once midway.
  • Remove from grill, drizzle each fillet with a little olive oil and serve immediately.

Grilled Halibut with Lemon-Basil Vinaigrette image

Steps:

  • Whisk lemon juice, olive oil, crushed garlic cloves and grated lemon peel in small bowl to blend. Stir in 2 tablespoons fresh basil and capers. Season vinaigrette to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Season halibut steaks with salt and pepper. Brush fish with 1 tablespoon vinaigrette, dividing equally. Grill or broil halibut steaks until just cooked through, about 4 minutes per side. Transfer fish to plates. Rewhisk remaining vinaigrette; pour over fish. Garnish fish with remaining 1 tablespoon basil and serve.

2 1/2 tablespoons fresh lemon juice
2 tablespoons olive oil (preferably extra-virgin)
2 garlic cloves, crushed

3 tablespoons thinly sliced fresh basil or 3 teaspoons dried
2 teaspoons drained capers

Steps:

  • To prepare paste: combine lemon juice, olive oil, paprika, coriander, cumin, garlic powder, salt, and black pepper into a paste. Spread paste on all sides of halibut fillets. Cover with plastic wrap and allow to marinate in refrigerator for 1 hour. Preheat grill for medium-high heat. Place fillets on grill and cook on direct high heat for 6 to 8 minutes, or until fish begins to flake. Turn once during cooking process. Remove fillets from the grill and drizzle each one with 1/2 teaspoon/2.5 mL of olive oil before serving.

4 halibut fillets, about 6-7 ounces/180 g each
2 tablespoons/30 mL extra virgin olive oil
2 tablespoons/30 mL fresh lemon juice
2 teaspoons/10 mL paprika
1 teaspoon/5 mL ground cumin
1 teaspoon/5 mL ground coriander
1 teaspoon/5 mL garlic powder
1 teaspoon/5 mL kosher salt
1/2 teaspoon/2.5 mL ground black pepper
