TZATZIKI (YOGHURT, CUCUMBER, GARLIC AND MINT DIP)

THIS is how tzatziki should be. NO ONIONS! I've never had tzatziki with onions before but notice that most of the recipes on here seem to include them?! This is simple, delicious and exactly as authentic Greek tzatziki should be. I make this with virtually fat free greek yoghurt and about half the oil and it still comes out beautifully. Keeps in the fridge for 2-3 days, however I suggest you make it the evening before you want it because leaving it overnight really allows the flavours to infuse. Yummy!

Steps:

  • Put the garlic, lemon juice and olive oil in a small bowl and leave to one side.
  • Peel alternate strips of skin from the cucumber (ie. peel a strip, miss a strip) and grate coarsely.
  • Place the cucumber in a sieve and sprinkle with salt.
  • Leave for approximately 30 mins to allow the water to drip away. Squash any remaining juice out of the shredded cucumber.
  • Put the yogurt and mint in a bowl. Mix well.
  • Add the garlic, lemon juice, olive oil and drained cucumber, and season well with black pepper.
  • Mix well and taste for salt before serving.

2 garlic cloves (finely minced)
2 tablespoons olive oil
1 tablespoon lemon juice
1 small cucumber
1 teaspoon salt
600 g thick plain Greek yogurt
2 teaspoons dried mint

TZATZIKI

A classic meze consisting of Greek yoghurt, cucumber, garlic and mint. There are many variants of this recipe, this is my take on it. Tzatziki makes a very nice condiment for gyros or kebabs. It goes very well with pork or lamb. It's also very nice served as a dip with pita bread triangles.

Steps:

  • Peel cucumber, cut in half lengthways and de-seed using a teaspoon, then coarsely grate.
  • Put grated cucumber into a sieve suspended over a bowl, sprinkle over 1/2 tsp of salt and mix through. Place a plate on top of cucumber and allow cucumber to drain for approximately 1 hour, or until water stops dripping (whichever is first).
  • Combine all the ingredients and mix thoroughly.
  • The flavours combine better if given time so I prefer to leave it in a sealed container in the refrigerator overnight.
  • If Greek yoghurt is not available then you can make your own Greek style from plain yoghurt by suspending a sieve lined with cheesecloth over a bowl, adding the yoghurt and allowing it to drain for 2-3 hours, or longer if thicker yoghurt is preferred, in a refrigerator. A paper coffee filter can be used as an alternative to a cheesecloth, following the above method.

150g Greek yoghurt
1/2 cucumber
2 - 4 crushed garlic cloves
1 tbsp olive oil
1 tsp lemon juice (or white wine vinegar)
1 tsp chopped or dried mint (or dill)
1/2 tsp salt
Pepper to taste

TZATZIKI SAUCE -YOGURT AND CUCUMBER DIP

Drain some low-fat yogurt overnight to make this yummy cucumber dressing. This is a delicious topping for grilled chicken or meat. It's also a great dip for veggies and pita chips. Added another clove of garlic ( werewolves in Florida). Eliminated the parsley and go a little bit heavier on the fresh dill.
