UPSIDE DOWN SHEPHERD'S PIE

This comforting casserole is made even easier by placing potato slices on the bottom. This is a very forgiving recipe, so feel free to adjust the veggies, soup mix, cheese and steak sauce to suit your family's preferences.

Upside Down Shepherd's Pie image

Steps:

  • 1. Wash and sice potatoes medium thick. No need to peel them. Place in bottom of a 2 quart casserole.
  • 2. Brown the ground beef in frying pan. Add in the onions and stir fry until soft. Sprinkle with flour and dry soup mix and stir fry 2 minutes over medium heat. Add steak sauce and water and stir until bubbly.
  • 3. Add the veggies and mix into the beef mixture.
  • 4. Pour meat mixture over the potatoes (salt & pepper the potatoes before this step). Top with grated cheese of your choice. I use Cheddar.
  • 5. Bake covered at 350 for about an hour, or until potatoes are tender when stuck with the tip of a knife.

4 potatoes, sliced
1 lb lean ground beef
1 onion chopped
2 Tbsp all purpose flour
1 Tbsp beef or french onion soup mix
1 c water
1/2 c frozen peas
1/2 c frozen corn
2 tsp steak sauce or a1 sauce
1/2 c grated cheese (cheddar, mozzarella, whatever you like!)

Steps:

  • In a large cast-iron or other ovenproof skillet, cook ground beef and onion until the beef is browned and onion is tender; drain. Add salt and tomato sauce; simmer 10-15 minutes. , Meanwhile, combine flour, baking powder, celery salt, paprika, salt and pepper in a bowl. Cut in butter until mixture resembles coarse meal. Add milk and stir until a soft dough forms. Drop by tablespoonfuls onto meat mixture. , Bake, uncovered, at 475° until biscuits are golden, 20 minutes.

UPSIDE DOWN (MAQLUBA)

This perfect meal features all four food groups. It is inspired by the Arabic dish called 'Maqluba,' which translates to 'upside down.' When the meal has finished cooking, you take the pot and flip it upside down onto a large serving platter, and everybody helps themselves.

Steps:

  • Bring to a boil the water, onion, garlic, cinnamon, turmeric, garam masala, salt, and pepper in a large pot. Add the lamb; reduce the heat to low and simmer 15 to 20 minutes. Separate the lamb from the liquid and set aside. Transfer the liquid to a bowl.
  • While the lamb mixture simmers, heat the oil in a large, deep skillet over medium heat. Fry the eggplant slices in the hot oil, assuring the pieces do not touch, until brown on both sides; remove to a plate lined with paper towels to drain. Use the same procedure to fry the zucchini and the cauliflower. Cook the broccoli in the oil until hot and remove to a paper towel-lined plate to drain.
  • Layer the lamb into the bottom of the large pot. Arrange the eggplant, zucchini, broccoli, and cauliflower on top of the lamb in layers. Pour the rice over the meat and vegetables, shaking the pot gently to allow the rice to settle into the dish. Pour the reserved cooking liquid from the lamb over the mixture until it is completely covered. Add water if needed.
  • Cover the pot and simmer over low heat until the rice is soft and the liquid is absorbed, 30 to 45 minutes. Remove the lid from the pot. Place a large platter over the pot and flip the pot so the dish is "upside down" on the platter. Serve with yogurt on the side.

Steps:

  • Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.
  • In a large skillet, heat oil over medium. Add onion, cumin, and red-pepper flakes; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes. Stir in tomato paste. Raise heat to medium-high; add beef and garlic. Cook, breaking up meat with a spoon until no longer pink, 4 to 6 minutes. Add corn and spinach; stir until spinach has wilted, about 2 minutes.
  • Place one tortilla in the prepared pan. Spreading evenly, top with 1 1/2 packed cups beef mixture, then 1/2 cup cheese. Repeat with two more layers. Top with last tortilla, and sprinkle with remaining 1/2 cup cheese.
  • Bake pie until top is lightly browned, 15 to 20 minutes. Run knife around edge of pan; remove sides. Using two wide metal spatulas, lift pie from bottom of pan, and transfer to a cutting board. Cut into wedges. If desired, serve with cilantro and sour cream.

I found this recipe many years ago in a "Favorite Recipes of America - Casseroles" book. This one can be topped with a pkg. of bought biscuit or cornbread mix, fixed according to the package. My family has enjoyed this recipe through the years. I hope yours will too.

  • Saute the onion, green pepper and beef in oil until brown.
  • Drain grease.
  • Add the other ingredients through the pepper.
  • Turn into a 2 Qt.

Steps:

  • Preheat oven to 425°F.
  • Brown meat in oil.
  • When meat is half brown, drain.
  • Add onion and green pepper.
  • Cook stirring frequently, until meat is completely browned and onion is transparent.
  • Add tomato sauce, water, salt, chili powder, and olives. Mix well.
  • Turn into 9-inch round casserole dish.
  • Mix Bisquick mix with milk and roll to fit top of dish.
  • Place on top of meat mixture.
  • Bake for 25 to 30 minutes. Or until browned.
  • Remove from oven and let stand 5 minutes, then invert on serving dish.
  • Cut into pie shaped wedges to serve.
  • NOTE: I've never inverted it before serving. We just dig right in!
