VANILLA ALMOND BUTTER

So good with apple slices, on toasted English muffins, with grahm crackers. Adapted from the California Almond Board.

Vanilla Almond Butter image

Steps:

  • In a food processor combine almonds, almond oil, vanilla extract, and sugar.
  • Blend until smooth.
  • Remove vanilla paste from inside bean and add paste to mixture.
  • Blend to combine.
  • For best flavor, chill for 24 hours prior to serving.
  • Serve with vanilla or cinnamon graham crackers, apples or other fruit, on toast, muffins, or put in smoothies! Enjoy!

3 tablespoons almond oil (if you don't have almond oil-try a neutral oil with a couple drops of almond extract)
1 tablespoon vanilla extract (Mexican or homemade preferred)
2 tablespoons sugar

  • Place all of the ingredients into a food processor. Turn it on and let it run for about two minutes. The mixture should be crumbly. Use a spatula to scrape down the sides.
  • Turn the food processor back one. Let it run for another two to three minutes. The nut mixture should be shiny and in one big ball. Use a spatula to press it down.
  • Turn the food processor on one last time. Let it run until the mixture starts to break down and gets creamy, another two to three minutes.
