VANILLA CRAZY CAKE | DIXIE CRYSTALS

Crazy Cake, also known as Wacky Cake or Depression Cake, is made without any butter, eggs, or milk. These cakes became popular during the depression when eggs and dairy were hard to come by, and they stuck around because the recipe is such a good one. This Vanilla Crazy Cake is quick, easy, and produces a delicious cake with a moist, tender crumb.

Preheat oven to 350ºF. Whisk together the dry ingredients: flour, sugar, baking soda, and salt. Use the handle of the whisk to create three depressions in the flour mixture (two small ones and a big one). Pour the vanilla and the vinegar in the small depressions, and pour the oil into the large one. Pour the water over all of it and mix until smooth. Lightly spray a 9X13-inch baking dish with nonstick cooking spray, and pour the batter into the dish. Bake for 45-50 minutes or until it passes the toothpick test. Serve it warm right away, or let it cool completely and top with your favorite frosting.

Steps:

Heat oven to 350°F.
Combine flour, sugar, baking powder and salt in a 8-inch baking pan. Set aside.
Stir together egg and vanilla in a small bowl with wire whisk. Make two indentations in flour mixture; pour oil in one and egg mixture in the other. Pour milk over flour mixture;mix well. Stir in pecans.
Bake for 30 to 40 minutes or until wooden toothpick inserted in center comes out clean.
Sprinkle chocolate chips over warm cake. Let stand for 2 minutes; slightly swirl chocolate chips.
