Steps:

  • Make dessert in just 15 minutes: Peel, halve and core 4 pears. Put in a shallow dish with 1 cup white wine, 2/3 cup sugar, 2 strips grapefruit zest and 1 split vanilla bean. Cover with plastic wrap; microwave about 10 minutes. Serve the pears with the vanilla syrup; top with whipped cream, if desired.

Steps:

  • Peel and halve the pears and remove seeds with a spoon or melon baller. Combine 2 3/4 cups water and the sugar in a large saucepan over medium-high heat. Split the vanilla bean and scrape the seeds into the water. Heat until the sugar is dissolved and the syrup comes to a simmer, about 3 minutes. Submerge the pears in the vanilla syrup and cover. Cook over medium heat until the pears are tender in the center when poked with a knife, 15 to 20 minutes. Remove from the heat. Add the lemon juice and salt. Use an immersion blender to puree the mixture. Cool the mixture 10 minutes. Pour the mixture into 16 large ice pop molds (2 1/2 to 3 ounces each) and freeze for 6 hours or overnight. Run the popsicles under warm water briefly to unmold.;

2 cups organic evaporated cane juice or sugar
1 vanilla bean
1 to 2 tablespoons lemon juice
1/2 teaspoon salt

I got this recipe at a church lesson evening. I make HUGE batches and store them in plastic bags in the freezer in place of popsicles...at least they are a little healthier than frozen kool-aid! I don't know how long it takes them to freeze, I just do them the night before.

  • Spoon mixture into six 8 oz plastic drink cups, dividing equally.
  • Insert popsicle sticks in center, freeze until solid.
  • To unmold, run a little hot water on the outside of the cup.

Steps:

  • In a measuring cup, combine ¾ cup half & half and 3 tablespoons sugar. Stir until sugar dissolves.
  • Divide among ten 3-ounce popsicle molds. Add 8 chocolate chips to each vessel, top with lid and secure with popsicle sticks, or follow freezing instructions.
  • Freeze until firm, 2 hours or up to overnight.
  • Combine cold brew and remaining 2 tablespoons sugar. Stir to dissolve.
  • Add remaining 2 tablespoons half & half and stir.
  • Remove popsicle mold from freezer and divide coffee mixture among vessels.
  • Return to freezer and freeze until set, an additional 4 hours or overnight. Serve.
