WIENER SCHNITZEL (BREADED VEAL CUTLETS)

Wiener Schnitzel (Breaded Veal Cutlets) image

Steps:

  • In a food processor, pulse the bread into fine crumbs. Transfer the breadcrumbs to a shallow bowl or lipped plate.
  • Put the flour in a shallow bowl or plate. Break the eggs into another shallow bowl and whisk with the milk, and season with salt, and pepper to taste.
  • To bread the meat: Dredge a cutlet in the flour, shaking off the excess; then dip it into the eggs, and finally coat the meat evenly with the breadcrumbs. Set on a piece of waxed paper or baking sheet. Repeat with the remaining cutlet.
  • Heat 2 tablespoons butter in a medium non-stick skillet over medium-high heat. While the butter is still foaming add the breaded cutlets and cook, swirling the skillet in a tight circle (this keeps the cutlets moving around the skillet), until golden brown and cooked through, about 1 1/2 minutes for the first side. Turn the meat and cook 1 minute on the second side to crisp the breading. Transfer to a plate and cover very loosely with foil while you cook the other cutlet. Serve with the lemon wedges.

Pork (or veal) Cutlets with Balsamic Sauce image

Steps:

  • Spread the breadcrumbs on a piece of wax paper.
  • Press both sides of the cutlets into the breadcrumbs, until coated.
  • Heat a large skillet over medium-high heat.
  • Add a little oil and cook the cutlets on each side until lightly browned and cooked.
  • You may need to add a little oil to brown the other side.
  • Stir the butter, garlic, and sage into the skillet.
  • Cook for a minute.
  • Add the chicken broth and sugar.
  • Let it simmer down to about 1/3 cup.
  • Add the vinegar and simmer a minute more.
  • Pour the sauce over the cutlets and serve.
  • If desired, use a potato peeler to make Parmesan shavings and garnish cutlets.

  • Preheat the oven to 180°/350F/gas mark 4. Place the bread crumbs and flour on two separate plates and the eggs in a bowl, whisk the eggs.
  • Add a pinch of salt and pepper to the bread crumbs and flour then in batches dip each escallope in flour then egg then bread crumbs, press the veal in the breadcrumbs until it’s completely covered.
  • Put 2 tbsp of olive oil in a medium pan and fry the veal cutlets on both sides until browned and crispy (you may need to add a little more oil as you go) Place the cutlets on a baking tray and set aside.
  • To make the parmesan cream, finely chop the garlic and fry in a small pan with a tsp of olive oil for a few seconds to a minute (don’t let it brown). Add the cream and bring to a boil for 1 minute. Turn the heat down low and add the parmesan and a pinch of salt, pepper, and nutmeg, stir. Turn up the heat slightly until the sauce is simmering and stir for another minute until the sauce has thickened slightly.
