VEGAN GREEK LEMON UN-CHICKEN SOUP

I adapted this recipe for ZWT #9 and like it so much, I 'm entering my adaptation to make again. The original recipe #502895 is probably equally wonderful, but this worked so well I didn't miss the meat products. It has a nice tang from the lemon and was very filling.

Vegan Greek Lemon Un-Chicken Soup image

Steps:

  • In a large pot, combine the vegetable broth, lemon juice, carrots, onions, celery, soup base, and pepper. Bring to a boil on high, then simmer for 20 minutes.
  • Blend the oil, tofu and the flour together in a food processor. Put the tofu mixture in a small bowl and ladle some soup broth into it. Stir mixture until blended, then gradually add it back to the soup mixture. Simmer for 10 minutes more, stirring frequently.
  • Add the cooked rice and vegan chicken cubes. Ladle hot soup into bowls and garnish with lemon slices.

1/2 cup fresh lemon juice
3/4 cup shredded carrot

6 tablespoons vegetable stock base (such as Better than Bouillon)
1/4 teaspoon pepper
1/4 cup canola oil
1/2 cup silken tofu
1/4 cup all-purpose flour
1 cup cooked brown rice
1 cup diced vegan chicken meat
16 slices lemons

GREEK LEMON CHICKEN SOUP

This soup is perfect as an introduction to a full Greek meal, or a hearty bowlful for a meal in itself. Serve with fresh pita triangles, and you'll be sure to please your guests!!

Steps:

  • In a large pot, combine the chicken broth, lemon juice, carrots, onions, celery, soup base, and white pepper. Bring to a boil on high, then simmer for 20 minutes.
  • Blend the butter and the flour together. Then gradually add it to the soup mixture. Simmer for 10 minutes more, stirring frequently.
  • Meanwhile, beat the egg yolks until light in color. Gradually add some of the hot soup to the egg yolks, stirring constantly. Return the egg mixture to the soup pot and heat through. Add the rice and chicken. Ladle hot soup into bowls and garnish with lemon slices.

  • Add the white part of the green onions, carrots, celery, and salt to the pot. Let them sweat for 10 minutes.
  • After 10 minutes, add water, Better Than Bouillon, white pepper, and green part of green onions to the pot. Bring to a boil.
  • Once the broth boils, reduce the heat to medium and add the lemon peel, thyme, dill, and bay leaf. You will remove the herbs and lemon peel before adding the orzo, so if you have a loose leaf tea bag or cheesecloth to make a makeshift bag (see notes), it will be much easier to remove them later. Place the lid half on half off to allow some steam to escape. Allow the flavors to cook together for 8 minutes for a tasty broth base.

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion. Cook the onion for 4-5 minutes, or until it’s clear and soft. Add the shallots, carrots, and celery. Cook the vegetables for another 4 minutes, until the carrots are just becoming tender. Add the garlic and cook for one more minute, until it’s fragrant. Add tablespoons of broth or water as needed to prevent sticking as you cook the vegetables.
  • Add the rice to the pot. Swirl it around for a minute to toast it, then add the broth and salt. Bring mixture to a boil and reduce to a simmer. Simmer the soup for 20-40 minutes (less time for white rice, longer time for brown rice).
  • When soup is almost done cooking, whisk together the lemon juice, miso, tahini or cashew cream, and a few tablespoons of hot broth from the soup. Add this slurry back to the soup, along with the nutritional yeast. Whisk it all thoroughly, till smooth. Stir in the dill and cook for a few more moments. Serve. Soup will keep, refrigerated, for up to four days, and it can be frozen for up to a month.
