HOMINY CASSEROLE

I love hominy so I made a casserole featuring it. It is easy to make and I love serving it as a side dish.-Marion Thurman, Crossett, Arkansas

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

SQUASH AND HOMINY SAUTE

Mixing the flavors of a summer squash, either Zucchini or Yellow Squash with Hominy creates a nice blend of flavors. You can choose one squash or the other or create a mix of both of them. You can also add more or less of hominy or squash, depending on how you feel or what is available to you.

Squash and Hominy Saute image

Steps:

  • Heat the olive oil in a cooking pan.
  • Sautee the onion on medium heat for 5 minutes Add the hominy and sautee until the onion is translucent.
  • Add the water, it should barely cover the bottom of the pan.
  • Add the squash and salt.
  • Cover and put on low heat.
  • Stir occassionally until squash starts to become tender.
  • Uncover and put on medium heat.
  • Stir regularly until all the pieces of squash are tender.

Steps:

  • Preheat oven to 325°.
  • Cook squash, onion, and butter in water until tender.
  • Add hominy, half grated cheese, jalapeños, sour cream and salt to cooked squash and mix.
  • Pour into greased casserole and top with remaining cheese and tortilla chips.
  • Bake 1 hour.

  • Place the onion and squash into the skillet and toss well. Add 1/2 cup of water, cover, and cook for 15 minutes. Reduce the heat halfway through and stir a couple of times to make sure the squash cooks evenly. Start preparing the vegan cheese sauce and crust while the squash cooks.
  • To make the cheese sauce place the silken tofu, cashews, lemon juice, apple cider vinegar, nutritional yeast, and salt in a blender and process until smooth. Set aside.
  • Then, make the crust by adding the ingredients to a food a processor and pulsing until it’s all chopped up. If you don’t have a food processor you can chop the cracker by with a knife and then mix together with the spices in a small bowl.

  • Heat a large skillet over medium-high heat. Add 1 tablespoon butter. Once melted, add the yellow squash and yellow onion. Sprinkle with 1/4 teaspoon salt. Saute for 8-10 minutes, or until the squash and onion are softened. Stir occasionally with a spatula to evenly cook.
  • While the squash is cooking, prepare the cream sauce. Heat a large skillet (it should be able to hold at least 2.5 cups of liquid) over medium-high heat. Add 1/4 cup olive oil. Once hot, sprinkle in the minced garlic, chopped thyme and oregano. Saute about one minute, until garlic is golden.
  • Sprinkle 1/4 cup all-purpose flour into the garlic. Cook another minute until the flour is lightly browned, stirring frequently to prevent burning. Slowly whisk in 1/4 cup coconut milk to form a thick paste. Slowly pour in remaining milk, whisking consistently to prevent lumps from forming. Sprinkle in 1/2 teaspoon salt, nutritional yeast, paprika and cayenne pepper.
