THE BEST MASHED POTATOES
This is our go-to recipe for classic mashed potatoes, made with plenty of butter and cream. To make them fluffy and flavorful, be sure to simmer them slowly and add plenty of salt to the cooking water. And don't skip the step of steaming the excess water off; leaving too much moisture in the potatoes causes them to be loose and gluey.

- Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.
- Drain the potatoes well and return them to the pot. Place the pot over low heat and let any residual water steam off, about 2 minutes. Mash the potatoes well with a potato masher. Fold in the butter with a spatula until melted, and then fold in the cream. Season with salt and pepper.

5-Ingredient Fix Contest Entry. Just another mash-up recipe. I lover rich foods and this dish includes other ingredients that I also love like, butter and garlic, leeks and peas. So I thought I'd try all these ingredients together and came up with a dish worthy of Thanksgiving dinner.

- Place garlic cloves in oven-proof small glass dish or bake ware and drizzle with a little olive oil. Cover container and roast garlic in 350 degree preheated oven for 25-30 minute, until soft. Do not burn garlic. Remove from oven and let cool.
- Clean leek in cold water. Sand and dirt gets down between the layers of a leek, so make sure you thoroughly clean it. Loosen the leafy layers and run under cold water until all grit is removed. Cut leek coarsely into about ¼ inch slices.
- Prepare snap peas by boiling briefly, 1-2 minutes, or steaming in a covered container in the microwave for 1 minute. Shuck some peas from the pods and discard pods. Set aside.
- In a non-stick skillet, cook sliced leek in 2 tablespoons of butter and cloves of roasted garlic for 1 minute over low heat. Add remaining butter to the skillet and continue cook another 2 minutes over medium-low heat allowing butter to brown a bit. Add the sugar snap peas and heat another half a minute. Remove skillet from heat and let veggies steep in brown butter sauce until ready to use.
- Meanwhile, prepare mashed potatoes according to package directions. Remove potatoes from bag and place in serving bowl. Pour burnt butter, leek, pea, and garlic sauce over potatoes and gently stir to incorporate.
- Season potatoes to your liking and serve alongside your favorite meat.
- Recipe makes 6 servings.
CLASSIC MASHED POTATOES

- Peel the potatoes, cut them into 1-inch cubes and place them in a large pot of boiling salted water. Simmer uncovered for 10 to 12 minutes, until the potatoes are tender. Drain the potatoes in a colander and then return them to the pot.
- Meanwhile, heat the milk and butter in a small saucepan until the butter is melted.
- Using a hand held mixer, break the potatoes up and at low speed slowly add the hot milk/butter mixture to make the potatoes very creamy. Add the sour cream, 2 teaspoons of salt and the pepper and whisk to combine. Serve hot.
BURNT SAGE BUTTER SAUCE FOR GNOCCHI
Very quick and easy to make to accompany my (homemade) gnocchi recipe. To serve, divide gnocchi among bowls, spooning over burnt butter sauce. Sprinkle with 1 cup (80g) grated/shaved parmesan cheese (optional).

- Fill a large pot with plenty of cold water, about 3/4 capacity and bring to a boil over high heat. When at a boil, add in the pasta, 1/2 teaspoon salt and 1 to 2 teaspoons oil. Stir pasta continuously until the water returns to a boil. Boil pasta according to packaging, or your preference, stirring occasionally.
- Drain pasta well in colander. Wipe the pot dry with a paper towel and then add in the butter. Melt the butter over high heat until frothy, and until its color has turned to an amber golden brown color, but not dark brown or black.
- Remove the pot from the heat and add in the drained pasta, and then quickly toss it well, as to prevent the pasta from sticking to the pot, coating pasta evenly with butter. Sprinkle in the garlic powder, crushed basil, oregano and grated cheese of choice. Add salt and pepper according to taste and toss well again.
- Transfer to serving bowl and sprinkle with finely chopped parsley (optional) and serve.

- Boil potatoes in salted water until they mash easily, about 15 minutes.
- Drain and mash with potato masher until smooth.
- In small frying pan over medium heat, stir onion and garlic in oil until onion is very limp, about 10 minutes.
- Cook slowly--reduce heat if it starts to brown.
- When onions are soft, stir in potatoes, parsley, cilantro, capers, salt and pepper.
- In a small bowl, beat egg yolk to blend; add to potato mixture and mix well.
- In another small bowl, beat egg white to blend.
- Cut egg egg roll wrapper into four squares (keep covered with plastic wrap until ready to use or it will dry out).
- Place about 1 1/2 teaspoons potato mixture in the center of each square.
- Brush edges lightly with egg white.
- Fold each square diagionally over filling to form a triangle; pinch edges to seal.
- Pour 2 inches of oil into a heavy 5-quart pan over medium heat.
- When oil reaches 375 degrees F, using a slotted spoon or a mesh basket and working in batches of 6 to 12 (cook only what will fit easily in one layer) lower pastries into oil.
- Fry until golden brown, turning once, 3 to 5 minutes total.
- Transfer to paper towel-lined baking sheets to a 200 degree F oven and keep warm up to 30 minutes.
- Allow oil to return to 375 degrees F before you put in next batch.

- Mix the egg and the Simply Potatoes Traditional Mashed Potatoes in a large bowl. Slowly add in the flour, mixing until a soft dough forms. If the dough is too sticky to handle, add another spoon or two of flour.
- Divide the dough into four pieces and roll each out into a long strand about ½ inch in diameter. Cut each strand into 1 - 1 ¼ inch pieces. Gently press down on each little dumpling with the times of a fork to create ridges.
- Bring a pot of salted water to a gentle boil and cook the gnocchi in two or three batches, scooping them out to a colander as they rise to the top after one or two minutes. Reserve a few spoons of the cooking water.
- Melt the butter in a pan over medium heat and cook until the butter starts to brown, about 2 minutes. Add the sage and a few tablespoons of the gnocchi cooking water. Add the gnocchi and toss in the butter sauce for a minute. Serve and enjoy! Pass some fresh parmesan at the table if desired.

- TO COOK GNOCCHI Bring a large pan of water to the boil.
- Add salt.
- Add gnocchi.
- Cook gnocchi just until it floats to the top- DO NOT OVERCOOK, this will only take a couple of minutes.
- Drain and divide gnocchi into serving bowls.
- TO COOK SAUCE Start preparing the sauce while the water for the gnocchi is coming to the boil.
- Melt butter in a small frypan over a medium heat.
- When the butter starts to foam, tip the pan often to check the colour of the butter.
- As soon as the butter begins to take on a golden brown tinge, add the garlic and sage.
- Give the mixture a stir, then remove the pan immediately from the heat.
- The sage and garlic will continue to cook in the heat of the butter and the pan, while you drain the gnocchi and divide it into serving bowls.
- Spoon the burnt butter sauce over the gnocchi, distributing the pieces of garlic and sage evenly.
- Using a spoon, turn the gnocchi over lightly in each bowl so that it is evenly covered with sauce.
- Sprinkle over parmesan cheese and serve immediately.
