CRISPY VEGGIE BUNS

One of the most underrated moves in the bun world, in my opinion, is when steamed buns are then crisped up in a little oil so they get a fried outer layer. The texture of the soft steamed bun with the crispy fried exterior is next level! These buns are both steamed and fried and they have a veggie filling that explodes with flavor. What does it for me is the Thai bird chili and fresh basil, so they're spicy and fresh and everything in between.

Crispy Veggie Buns image

Steps:

  • For the bun dough: In the bowl of a stand mixer fitted with the dough hook, combine the all-purpose flour, cake flour, sugar, yeast and salt and whisk to combine. Add the water and shortening and mix 10 minutes. Transfer to an oiled bowl and let sit until doubled in size, 1 to 2 hours.
  • For the filling: While the dough is rising, preheat the oven to 425 degrees F.
  • Spread the bok choy, scallions, garlic, chile peppers, onion, ginger and red cabbage in an even layer on a baking sheet. Drizzle over the peanut oil and season with the salt and pepper. Roast until cooked down and roasted, about 45 minutes. Transfer to a mixing bowl, add the basil, sesame oil, soy sauce and rice vinegar and toss to combine. Refrigerate the filling until you are ready to form the buns.
  • When the dough has doubled, transfer it to a work surface and knead for 2 to 3 minutes, dusting with flour if sticky. Divide the dough into 10 even pieces. Cover with plastic and let rest for 10 to 15 minutes.
  • To form the dumplings, flatten each dough piece into a 4-inch circle and fill with a heaping tablespoon of filling. Pinch the edges together to seal and twist (it will seem like too much filling, but the dough is stretchy enough to hold it). Cover with plastic wrap or a clean towel and let rest on a sheet tray for 30 minutes.
  • For the veggie buns: Heat the peanut oil in a large nonstick skillet over medium heat. When the oil is shimmery, add the buns seam-side down. Sear until golden on the first side, 3 to 4 minutes, then flip, add about 1 cup water (carefully because it will get a little spitty), cover immediately and let steam until puffy, 8 to 10 minutes. Remove the cover and continue to cook until the water is gone. Serve with soy sauce and black vinegar.

1 cup all-purpose flour, plus more if needed for dusting

3 tablespoons granulated sugar
1 1/4 teaspoons active dry yeast
3/4 teaspoon kosher salt

Steps:

  • In a small pot over medium heat, add the rice vinegar, sugar, and salt and whisk to combine. Bring to a boil and continue whisking until the salt and sugar have dissolved. Remove the pot from the heat.
  • Add the cooked sushi rice to a large bowl and the cooked black rice to a separate medium bowl. Add ¾ of the rice vinegar mixture to the sushi rice and the remaining ¼ to the forbidden rice. Mix until the vinegar mixture is well distributed.
  • Make the shiitake veggie roll: Heat the sesame oil in a medium pan over medium heat. Once the oil is simmering, add the shiitake mushrooms, soy sauce, garlic powder, and pepper and cook for 6-8 minutes, until the mushrooms have released their juices and begin to crisp up.
  • Place 1 sheet of nori over a bamboo sushi mat. Scoop 1 cup (230 g) of sushi rice on top of the nori. Fill a small bowl with water to dip your fingers into--this will prevent them from getting sticky when handling the rice. Using your fingers, spread the rice in an even layer over the nori, leaving a 1-inch (2-cm) border at the top to seal the roll.
  • Over the bottom quarter of the nori, layer the spinach, cucumber, carrot, and shiitake mushrooms. Use your fingers to hold the vegetables in place while you begin to roll the nori. Squeeze the bamboo mat around the roll as you go to ensure a tight sushi roll. Transfer the sushi roll to a cutting board and cut it in half, then cut each half into quarters for a total of 8 sushi pieces.
  • Make the sweet potato tempura roll: Heat the vegetable oil in a medium pot until it reaches 375ºF (190ºC).
  • In a medium bowl, combine the flour, baking powder, salt, and pepper and mix well with a fork. Pour in the ice water and mix until incorporated--some lumps are okay. Drop the sweet potato sticks into the batter and toss with your fingers to ensure they are thoroughly coated.
  • Transfer a few of the sweet potato sticks at a time to a spider and carefully drop them into the hot oil. Cook for 3-4 minutes, until crispy, then transfer to a paper towel-lined plate.
  • Place 1 sheet of nori over a bamboo sushi mat. Scoop 1 cup (230 g) of sushi rice on top of the nori. Using your fingers, spread the rice in an even layer over the nori, leaving a 1-inch (2-cm) border at the top to seal the roll.

  • Over the bottom quarter of the roll, layer the teriyaki tofu, red bell pepper, and carrot. Use your fingers to hold the filling in place while you begin to roll the nori. CAI BAO FILLING (VEGETABLE TOFU BUN FILLING, SESAME-FLAVORED)

A savory, sesame-soy flavored spinach stir-fry. This can be served as a course on its own, but is much more tasty as a filling for steamed buns. Herbs, greens tofu, and mushroom is one of the most common fillings found in street stall, aside from the ubiquitous rou bao (pork filled buns). Since we don't have access to some of the wonderful fresh herbs here, I substituted spinach for them and went heavier on sesame and soy flavors.

Cai Bao Filling (Vegetable Tofu Bun Filling, Sesame-Flavored) image

Steps:

  • Heat oil in a wok over high heat.
  • Add onions, garlic, and a splash of the sesame oil and soy sauce.
  • Stir fry for 1 - 3 minutes to bring out flavor.
  • Add tofu and stir fry until golden. If cubes are too large, break them during frying.
  • Add mushrooms and another splash of sesame oil and soy sauce. Stir fry for 3 - 5 minutes.
  • Add remaining sesame oil, soy sauce, and the vinegar.
  • Add the spinach immediately.
  • Stir fry until spinach is well wilted, 4 - 10 minutes.

I think I got this recipe and others I have posted from the back of a package of egg roll wrappers. They keep nicely in the freezer for up to a month (thaw completely before frying) and for up to 24 hours in the fridge.

Tofu-Vegetable Egg Rolls image

Steps:

  • Place square of tofu between layers of paper towels and drain for 15 minutes before cutting into 1/2 inch cubes.
  • Heat 1 T. oil in wok or skillet until hot.
  • Add ginger, onion, and cabbage; stir fry for 1 minute.
  • Add chopped mushrooms and tofu; stir-fry gently for 1 minute; remove to colander and drain for 15 minutes.
  • Egg roll filling Instructions-------------------.
  • Make a sealer for folding egg roll by stirring together flour and water.
  • Keep egg roll wrappers under a damp towel to keep them moist as your filling egg rolls.
  • Place 1 egg roll wrapper with 1 corner facing you.
  • Place 3 tablespoons of filling on the center of the wrapper.
  • Fold bottom corner over filling.
  • Moisten left and right corners with the sealer.
  • Fold them to the center, over filling sealing them to the bottom corner.
  • Brush sealer onto the top corner edges.
  • Roll egg roll up away from you enclosing filling tightly.
  • Press top corner onto egg roll to seal (like an envelope).
  • Repeat for each egg roll.
  • To fry egg roll, pour oil 3 inches deep into wok or Dutch oven; heat 375 degrees.
  • Fry egg rolls 3 or 4 at a time, turning once, until brown; drain on paper towel.
  • Keep warm in a 250 degree oven until all egg rolls are fried.

The fragrant, tasty filling is delightful and satisfying enough to please meat lovers. While you can feature just one vegetable, such as a leafy green, I like to create a varied filling that's full of surprising textures and flavors. It's important to cut the vegetables and pressed tofu into small, thin pieces so that the cooked filling is easy to measure and wrap up in the dough.

Steps:

  • To make the flavoring sauce, combine the sugar, pepper, water, soy sauce, and sesame oil in a small bowl, stirring to dissolve the sugar. Set aside near the stove.
  • Heat the canola oil in a medium skillet over medium-high heat. Add the scallion and cook, stirring constantly, for about 30 seconds, or until aromatic and slightly softened. Add the cabbage, tofu, carrot, and mushrooms. Stir to combine and add the flavoring sauce. Bring the mixture to a fast simmer, then allow it to bubble away, stirring frequently, for about 3 minutes, or until the liquid has reduced by about one-third, and the vegetables are cooked through. Give the cornstarch mixture a final stir and add it to the filling mixture. Cook, stirring, for another 30 seconds, or until the filling coheres. Transfer to a bowl and set aside to cool completely until using. (Just like the other bun fillings, this one can be prepared up to 2 days in advance, covered with plastic wrap, and refrigerated.
