SUPREME GREEN VEGETABLE BAKE

My paternal grandmother passed this recipe down to me. She also offered comments on different ways to prepare this dish, "so as not to become bored with the same old dish over and over." She was a great inspiration for my love of baking and cooking.-Priscilla Gilbert, Indian Harbour Beach, Florida

Supreme Green Vegetable Bake image

Steps:

  • In a large bowl, combine the first five ingredients. Fold in broccoli and spinach. Transfer to a greased 13x9-in. baking dish. Sprinkle with French-fried onions. , Bake, uncovered, at 350° for 20-25 minutes or until a thermometer inserted in the center reads 160° and top is lightly browned.

3 large eggs, lightly beaten
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/3 cup mayonnaise
1-1/2 cups shredded reduced-fat cheddar cheese
1 small onion, finely chopped
6 cups frozen chopped broccoli, thawed and patted dry
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup french-fried onions

This is a recipe handed down through the family. It is always requested at church and family functions usually with no leftovers! It is delicious and a good recipe to get the kids to eat their vegetables.

Steps:

  • 1. Preheat oven to 350 degrees. Place vegetables in a pot of boiling salted water for 5-6 minutes. Drain well and set aside.
  • 2. In a large bowl combine soup, sour cream and pepper. Fold in vegetables; mix well. Pour into a greased 2qt casserole dish.
  • 3. Combine stuffing mix and butter. Sprinkle around the edges of casserole. Bake uncovered 30 minutes.

1 1/2 lb broccoli, chopped
1/4 c carrot, chopped
1/4 c onion, chopped
1/4 c celery, chopped
1 can(s) cream celery soup
1/2 c sour cream
1/8 tsp pepper
3/4 c herb-seasoned herb mix
2 Tbsp butter, melted

Steps:

  • If using fresh vegetables, break into florets.
  • Steam vegetables until almost done.
  • Put into a 2 quart buttered baking dish.
  • Cover with soup, parmesan cheese and onions.
  • Bake, covered at 350 degrees for 15 minutes.
  • Remove cover and bake for an additional 15 minutes.
  • If microwaving, follow above directions, using a 2 quart glass baking dish. Microwave on high for 4-5 minutes, or until heated through.

Steps:

  • Bring cut up veggies to a boil in enough water to cover. Drain and put in lightly buttered 11x7" casserole.
  • Beat eggs. Combine the mayonnaise, onion, mushroom soup, eggs and half the grated cheese. Pour evenly over veggies and sprinkle remainder of cheese over top. Level gently. Pour melted butter over top of entire casserole. Spread croutons over entire top of casserole.
  • Bake 40 minutes in 350°F oven.

Steps:

  • Preheat oven to 350 degrees...Peel and slice eggplant into 1/4 inch slices.
  • Beat egg and milk together. Dip slices in egg and milk and then crumbs.Fry on medium heat until lightly brown on both sides. Salt Lightly
  • Arrange slices into casserole dish or 9X13in. baking pan..Cut cheese slices into quarters and arrange on top of eggplant.
  • Spoon cream of mushroom soup on top of cheese. Repeat layering. Sprinkle top with cracker crumbs and bake for 25 to 30 minutes.
