CREAM OF SPINACH CHEESE SOUP

- In a small saucepan, combine the broth, spinach, onion powder and pepper. Bring to a boil. Combine flour and milk until smooth; gradually add to soup. Return to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Stir in cheese until melted.

VERY EASY CREAM OF SPINACH SOUP

Steps:
- 1. Place spinach, mushroom soup, and half and half in blender. You may need to work with half of this mixture at a time if blender is not big enough to accomodate all at once. Puree in blender until smooth.
- 2. Place pureed mixture in saucepan with remaining ingredients (except, of course, garnish), bring to a simmer, reduce heat to low, and cook for about 20 minutes to blend all flavors.
- 3. Garnish is optional but crunchy croutons are nice.

Steps:
- Place spinach, water, bouillon, onion, and garlic powder in a large pot over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer until onion is tender.
- Meanwhile, melt the butter in a small saucepan and whisk in the flour until smooth. Cook for 2 minutes. Slowly stir in half-and-half; mix until smooth. Pour the cream mixture into the spinach soup, and simmer until thickened, about 10 minutes. Season to taste with salt and pepper.

"CREAM" OF SPINACH SOUP
Wonderful comfort food from Rozanne Gold, a favorite cookbook author. This is a creamless creamed soup and it's delicious. It's made thick with potatoes and rich with butter. The color of this soup is stunning.

Steps:
- Bring water and salt to a boil; cut the potatoes in half lengthwise, and then into 1/2" thick slices; boil over medium-high heat for twenty minutes.
- Add the spinach and boil another 10 minutes being careful to not overcook in order to maintain it's bright green color.
- Drain, reserving 1 1/4 cups cooking liquid; in a food processor, process the potatoes and spinach until very smooth, adding the butter 1/2 T at a time.
- Return the puree to the pot and add the reserved liquid until the desired consistency; reheat slowly and season with salt and pepper; ladle into shallow soup plates and garnish with nutmeg or shaved cheese.
