MOIST BANANA BREAD
I found this recipe in a family cookbook, and it's been a favorite ever since. Everyone seems to like it, even those who don't normally care for banana bread.

- Preheat oven to 350°. In a large bowl, combine first six ingredients. In a large bowl, whisk eggs, bananas, oil and vanilla. Stir into dry ingredients just until moistened. Stir in nuts if desired. , Transfer to two greased 8x4-in. loaf pans. Bake 55-65 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks.

This bread is a family favorite. It is very moist, freezes well, and makes a great addition to school lunches with peanut butter spread on a slice.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9-inch loaf pan.
- Mash 2 bananas in a bowl with a fork. Place remaining 2 bananas in a separate bowl with 1 cup sugar and beat the bananas and sugar with an electric mixer until creamed and fluffy, 3 minutes. Beat in melted butter, eggs, sour cream, and vanilla extract until thoroughly combined.
- Whisk flour, baking powder, and salt together in a bowl and stir the flour mixture into banana-sugar mixture. Fold in mashed bananas and walnuts. Pour batter into prepared loaf pan and tap the pan on the counter several times to remove any air pockets. Stir 2 teaspoons sugar with cinnamon in a small bowl and sprinkle the cinnamon sugar over the top of the loaf.
- Bake in the preheated oven until bread is golden brown on top and set in the center, 1 hour and 15 minutes; rotate bread pan in oven halfway through baking. Cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

- 1. Preheat oven at 350. Take out a 9x5x3 bread pan and grease it.
- 2. Add all ingredients into a large bowl. ( Add a dash more of milk for a moist bread.).
- 3. Blend ingredients until the mixture is creamy or for 30 seconds.
- 4. Pour mixture into bread pan and insert into the oven.
- 5. Cook for 70 minutes.
- 6. Use a toothpick to see if it is done.

MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

- Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
- Add the baking soda and flour.
- Combine well for 2-3 minutes.
- Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.
VERY MOIST BANANA NUT BREAD
This is a very easy, "no mixer" bread to make. It is very moist and a little heavy type banana bread. The really important thing to remember is using all black bananas to get my same results. I always use 5 medium sized bananas and this recipe makes 2 loaves. Also, I've never used buttermilk, but sour milk instead..a little vinegar added to regular milk. I've used this recipe since 1972 and last year made 32 loaves to give away for Christmas! It's truly a wonderful bread. I only bake it until the toothpick comes out almost clean, as we like it really moist. If you over bake it, or wait til the toothpick is completely clean, the bread will be a lot dryer. I realize some like it this way, so thats why I've given this hint. My family and friends would rather have it a little under done than over. It's so good with coffee, butter/jelly or I like mine just plain. I bake it in tin foil pans and it freezes wonderfully. I try to always have one or two in the freezer for company, or a little gift. This recipe came from a ladies club cookbook. The kind where everyone contributes recipes, they are made into a recipe book and sold to make money for charities. All the cooks are just plain "down home" country gals that produce miracles in the kitchen. It's my favorite cookbook and I've almost worn it out and it can't be replaced. I know there are many banana bread recipes here, so thanks for trying this recipe. I hope you enjoy it!

- Heat oven to 350°. Grease or spray 2 loaf pans.
- In a large bowl, mash bananas with a masher or by well washed hands.
- Dissolve soda in buttermilk-- use a larger container as it will foam up quite a bit.
- Mix all ingredients by hand and add in 1 cup chopped nuts. Bake at 350° for 1 hour, or until toothpick comes out ALMOST clean.
- Totally clean will mean a dryer loaf.
- Let cool 15 minutes after removing from oven and remove from pans.
- Or, let cool, cover with foil, slide into freezer bags and freeze.
- Great when using tin foil pans.
MOIST BANANA BREAD
One Christmas, several years ago, I was looking for a good banana bread to give as gifts to my friends. I tried several recipes and this was the one I liked the best. I use a Pampered Chef pan that has four mini-loaves on it and cook in my oven for about 50-55 minutes. Start checking the bread at about 50 minutes. Sometimes I also sub 1/2 to 3/4 wheat flour in place of using all white flour. It's a great bread!

- Spray one 9 X 5 inch loaf pan with non-stick cooking spray.
- Blend together the eggs, buttermilk, oil and bananas.

MOIST BANANA NUT BREAD
I got this from a recipe club I was in.It is the only banana bread my family will let me make.We prefer it without nuts,but it is great with chopped pecans for the nut lovers.It is very moist.I keep over-ripe bananas in the freezer,so I can make it at a moments notice.It is a great after-school snack,but it never lasts long at our house!

- Combine dry ingredients in large mixing bowl.
- Place butter, eggs, bananas, sour cream, and lemon juice in blender or work bowl of food processor. Whirl until smooth.

VERY MOIST WHOLE WHEAT BANANA BREAD
This is my own adaptation of banana bread, and it has turned out very moist. Lower sugar, more nutrient dense, too. Has a very fine texture due to the whole grain wheat. Try it, and you'll see! This freezes well for later use.

- Preheat oven to 350 degrees.
- Combine margarine, oil, sugar, stevia, and mashed bananas in a large bowl. Mix until creamy.
- Add vanilla, eggs, and milk to the creamed mix.
- In a separate bowl, measure out whole wheat flour. To get a finer texture, you can blend it. This helps to achieve the moistness and unique texture of the bread.
- Add baking soda and salt to flour, and mix.
- Add flour mixture to the creamed mixture.
- Put bread batter into a greased 9"x5" pan, and spread flat into pan.
- Bake 50-60 minutes, depending on the power of your oven.
- Cool in pan for 5 minutes before removing to a cooling rack. :).

MOIST & DELICIOUS BANANA NUT BREAD
I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

- Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
- *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
