5 BEAN SALAD WITH HONEY MUSTARD DRESSING
Need something FAST,EASY,HEALTHY and DELICIOUS as a side dish or to bring to a barbeque...then this is it. I have even had bean haters(can you believe there is such a thing?) eating and liking this :o)

Steps:
- 1. open all the cans into a collander and rinse well with cold water...gently mixing with your hand until the water runs clear(until all the starchy liquid is removed).
- 2. empty into large bowl, add diced peppers,onion and dressing and stir gently to combine all the ingredients.
- 3. You can serve this right away but I will tell you if you refrigerate it for a few hours you will be very pleased as the peppers and onion marinade in the dressing it becomes so much better. ENJOY
- 4. @ As you can tell this recipe is easy to change around with your favorite beans,even green beans. I don't recommend the larger softer beans only because they break up while rinsing/mixing. If you like a zestier salad you can add red onion,chopped jalapeno.
VIDALIA THREE BEAN SALAD WITH MUSTARD DRESSING
This is our family's favorite bean salad. It is the sweet Vadalia onion that makes it special. Please feel free to use canned (home/store) beans in this recipe.

- Mix green beans, yellow wax beans, kidney beans, onion, celery, green bell pepper, and pimento peppers in a bowl.
- Combine vinegar, oil, sugar, salt, and pepper in a saucepan; bring to a boil. Cook and stir until sugar is dissolved, about 5 minutes. Remove saucepan from burner and pour dressing over bean mixture; toss to coat. Refrigerate until flavors blend, 8 hours to overnight.

VIDALIA HONEY MUSTARD DRESSING
The secret to a creamy, emulsified dressing or vinaigrette is mustard. You've probably noticed that when you combine oil and vinegar in a bowl they form separate layers. If you whisk the mixture it will combine only for a brief period, then separate out again. Mustard helps thicken liquid sauces by absorbing some of the liquid and allows the suspension of one liquid in another. Try this savory-sweet combination over crisp salad greens or buttercup lettuce or as a dipping sauce for the Oven-fried Chicken Breasts with Pecan Crust (page 102). If Vidalias are unavailable, use another sweet onion, such as Walla Walla or Texas Sweet.

- Place the onion in the bowl of a food processor fitted with the metal blade and pulse until smooth. Add the vinegar, honey, and mustard and puree until smooth. Add the oil in a slow steady stream until the mixture is thick and emulsified. Taste and adjust for seasoning with sugar, salt, and pepper. Store in an airtight container in the refrigerator for up to 3 days.

- Thinly slice the red onion and add to a large bowl.
- Quarter the cucumber, remove the seeds and dice, then add to the bowl with the red onion.
- Use a fork to remove the leaves from the parsley, then finely chop and add to the bowl.
- Add the chickpeas, kidney beans, and cannellini beans to the bowl.
- In a liquid measuring cup or small bowl, combine the olive oil, red wine vinegar, oregano, salt, and pepper, and whisk together.

- Fill a large bowl with ice water; set aside. Set a steamer basket in a large pot with a lid. Fill with enough water to come just below basket; bring to a boil.
- Place green and wax beans in basket; reduce heat to a simmer. Cover pot, and steam until beans are crisp-tender, 6 to 8 minutes. With tongs or a slotted spoon, transfer beans to ice water. Drain, and pat dry.
- In a medium bowl, whisk together mustard, vinegar, and oil; season with salt and pepper. Add green, wax, and cannellini beans; toss to coat. If storing, cover and refrigerate up to 1 day; bring to room temperature before serving.
