WAFFLE IRON CHOCOLATE COOKIES
S-o-o-o good and easy to make. Frost with white powdered sugar frosting.

Steps:
- Melt chocolate over low heat. Cream together sugar and butter or margarine. Add chocolate and mix well.
- Add eggs and dry ingredients. Mix well.
- Heat waffle iorn. Non stick spray can be used to prepare iron.
- Drop about 1 Tablespoon of dough in each section of preheated iron.
- Bake until cookies start to turn brown. Be careful because they can burn easily.
- Cool and frost with a white powdered sugar frosting. (See recipe for Vanilla Glaze.)

- In a bowl, combine sugar, butter, eggs and vanilla. Combine flour and cocoa; gradually add to the sugar mixture. Drop tablespoonfuls of batter into each section of a preheated waffle iron. Bake according to manufacturer's directions. Remove carefully; cool on wire racks. Spread with chocolate frosting.

- 1. Combine first 4 ingredients in a sauce pan, bring to a boil and boil for 3 min.
- 2. Remove from heat and stir in vanilla extract.
- 3. Allow to cool a bit then add powdered sugar to make a soft, pourable frosting.

I got this recipe from a church friend about 10 years ago. These are different and fun to make. Also GOOD!

- 1. Melt butter in a medium saucepan. Add cocoa and mix well. Remove from heat. Stir in sugar. Add vanilla, then stir in eggs, being sure mixture has cooled enough so that eggs don't cook, but instead mix in well. Stir in flour.
- 2. Drop dough by teaspoons-full onto hot waffle iron. You can make 4 at a time. Close waffle iron and let bake for 1 minute. Remove to wire racks to cool. Frost with chocolate frosting and top with a pecan, if desired.
- 3. If you prefer not to frost cookies you can sprinkle with with powdeed sugar to finish.

- In large bowl, mix together melted butter and cocoa. Allow to cool for 10 minutes. Add sugar, then eggs one at a time, mixing well. Add flour, salt, and vanilla and stir to combine. Dough will be thick. Depending on your waffle iron, use between 1 teaspoon and 1 tablespoon and drop into each section of the iron.* Cook for just a few minutes and then frost immediately.

- Cookies:.
- Combine chocolate squares and 1/2 cup butter in the top of a double boiler. Bring the water to a boil; reduce heat to low, and cook until the chocolate and butter melt, stirring occasionally. Set aside.
- Combine eggs, sugar, and vanilla in a medium mixing bowl; beat at medium speed of an electric mixer until blended. Add flour and reserved chocolate mixture. Mix well.
- Preheat waffle iron. Drop dough by 2 teaspoonfuls onto iron. Close iron, and bake for 1 to 1 1/2 minutes or until done. Let cool on wire racks. Continue cooking cookies until your dough is gone.
- Top with frosting once they are cool.

- Cream butter; add cocoa, beating well at medium speed of an electric mixture. Gradually add powdered sugar, milk, and vanilla, beating until smooth.

- Melt chocolate with 1 cup butter (2 sticks) in a saucepan over medium-high heat, stirring constantly. Let cool slightly.
- Put eggs, vanilla, and granulated sugar in bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale, 4 to 5 minutes. Mix in chocolate mixture, salt, cinnamon, 1/2 cup cocoa powder, and the flour.
- Heat a waffle iron until hot. Lightly coat grids with cooking spray. Spoon about 1 tablespoon batter onto center of each waffle-iron square to make 1 1/2-inch rounds. Close cover; cook until set, about 1 1/2 minutes. Transfer to a wire rack, bottom sides up. Let cool completely. Repeat with remaining batter, coating grids with cooking spray after each batch.
- Melt remaining 2 tablespoons butter in a small saucepan over low heat. Add confectioners' sugar and remaining 2 tablespoons cocoa powder; stir until smooth. Stir in milk.
- Gently dip 1 surface of each cookie in icing so that just the waffle lines (not gaps) are coated. Repeat with remaining cookies and icing. Transfer to wire racks; let stand until set, about 10 minutes. Dust iced surfaces of cookies with confectioners' sugar.

My mom made these cookies years ago. They are good with or without the frosting. Sorry, the recipe didn't say how long they cook (so I guessed on the prep and cook time), or how much powdered sugar to use, and I haven't made these in awhile so I don't remember. I'm also not sure about how many dozen this makes, I just guessed.
