WATERMELON BASKET

For a dessert you can serve in "fruitful" bowls, fill hollowed-out watermelon halves with slices of papaya, honeydew, and cantaloupe, as well as balls of the watermelon -- all sprinkled with lime zest. Choose from a trio of toppings: Berry sauce with lime and ginger adds flavorful color, coconut brittle lends richness, and pink Hawaiian sea salt supplies savory contrast.

Steps:

  • Trim ends off watermelon, then cut watermelon in half at an angle. Remove flesh from each half with a melon baller; set aside. Scrape out any excess flesh with a spoon for a clean, smooth interior.
  • Stand watermelon baskets upright on trimmed ends. Fill bottom third of each basket with about 40 watermelon balls. Place assorted melon and papaya slices on top of watermelon balls against the back of the basket, evenly dividing fruit between baskets. Fill in front with remaining watermelon balls. Sprinkle with lime zest. Serve with sea salt, sauce, and brittle as accompaniments.

1 medium oblong seedless watermelon, (10 to 12 pounds)
5 to 6 pounds mixed cantaloupe and honeydew melons, seeds and rinds removed, cut into 1/2-to 1-inch-thick wedges (32 to 36 slices)

  • Cut a thin slice from the bottom of watermelon with a sharp knife so it sits flat. Mark horizontal cutting line 2 in. above center and around the melon. , For handle, score a 1-1/2-in.-wide strip across the top of melon, connecting both sides to the horizontal line. With a long sharp knife, cut all the way through the rind above the cutting line in a zigzag pattern., Carefully lift off the side pieces. Remove fruit from both sections and cut into balls. Refrigerate the basket., In a large bowl, combine watermelon and honeydew balls. In another bowl, whisk cranberry juice, corn syrup and lime juice until blended; pour over melon balls. Cover and chill for 3 hours., Drain; spoon melon into watermelon basket. In a small bowl, beat the cream cheese and milk until smooth. Beat in sugar, lemon juice and cardamom; serve with melon.

Steps:

  • Set the watermelon on its side (stem end facing left or right) and cut off a small, flat piece of rind from the bottom so the watermelon is stable. Wrap a piece of thin masking tape horizontally around the watermelon about 1/2 inch above where the stem was. Wrap 2 more pieces over the top at the center to make a band/handle for the basket that is 1 1/2 inches wide.
  • Using the tape as a guide, cut out the wedges that remain on either side of the handle to make a basket shape, down to the horizontal tape. Scoop out 4 cups of watermelon balls using a melon baller and reserve. Remove the remaining watermelon flesh and save for another use. Use a paring knife to trim the flesh from the handle to create a small, neat strip of melon. Use a spoon to do the same for the inside of the basket. Freeze the basket for at least 3 hours. Refrigerate the watermelon balls.
  • Put 3 cups of the watermelon balls in the bottom of the basket. Scoop balls of sorbet and arrange on top of the watermelon. Decorate with the remaining watermelon balls. Serve immediately or put back in the freezer until serving, up to 1 hour.

Steps:

  • With a large, sharp knife, remove the top 1/4 section of the watermelon. With a melon baller, scoop flesh from inside of watermelon, removing as many seeds as possible. Leave 1/2 inch of flesh inside the shell of the watermelon. Scoop cantaloupe and honeydew in the same manner, removing as much flesh as possible, and discarding the rinds. Refrigerate fruits separately until ready to assemble.
  • In a small saucepan over medium-high heat, bring water and sugar to a boil. Remove from heat, and continue stirring until sugar has completely dissolved. Add lemon zest, and set aside to cool.
  • To serve, place watermelon balls, cantaloupe, honeydew, oranges, pineapple, strawberries, and grapes, in a large mixing bowl. Pour syrup over, and toss thoroughly. Transfer mixture to watermelon bowl, and serve. Set aside any fruit mixture that will not fit. There will be enough fruit to refill the bowl.

Steps:

  • Using long sharp knife, cut a thin slice from end of watermelon, being careful not to cut into flesh of watermelon. Stand watermelon on cut end. Using a washable marker, mark handle at top of basket by drawing 2 parallel lines that are 2 1/2 inches apart, starting at top of watermelon and drawing lines about 6 inches down each side.
  • Using a sharp knife, cut out a wedge-shaped piece of watermelon from each side, leaving the handle intact. Using a large spoon, gently scoop out watermelon flesh, leaving about 4 inches of flesh at bottom of watermelon.
  • With a small knife or garnishing tool, make "V" or scallop cuts about 2 inches apart on cut sides and handle of watermelon basket.
  • Cut watermelon into 1-inch chunks or use melon ball tool to make balls of watermelon. Measure 3 cups of watermelon and place in large bowl. Refrigerate remaining watermelon for another use.
  • Add grapes and cantaloupe to watermelon in bowl. Gently mix in 1/4 cup mint, the lemon juice and sugar. Refrigerate fruit mixture and watermelon basket separately until ready to use. Just before serving, fill watermelon basket with fruit mixture. Garnish with strawberries and additional mint leaves.

Steps:

  • Take a sharp knife and slice a small thin piece off the bottom of your melon.
  • This will allow the finished basket to sit flat on a plate or table without rolling.
  • Next, take the tip of your knife (you can also use your pumpkin decorating tool out if you have one) or garnishing tool and score the watermelon in half, horizontally.
  • Then mark a strip of about 1 1/2- 2" wide that will form the handle of your basket.
  • If you have trouble seeing the score lines, you might want to try using a marker.
  • Next, take your garnishing tool and start cutting around the melon on the lines.
  • The garnishing tool naturally makes V shaped cuts, which makes doing a basket like this a breeze.
  • If you do not have a garnishing tool, use a small knife and make the V cuts one side at a time.
  • You could also forget the V and make straight cuts.
  • To make separating the melon easier, and the finished product neater, turn your garnishing tool over, and go over the cuts in the opposite direction.
  • Carefully separate the cut sides from the body of the watermelon.
  • If you used a marking pen and there are any residual marks left, a handy way to get rid of them is to use a new emory board and gently sand them off.
  • Take a melon baller and hollow out the inside of the watermelom.
  • After removing all the edible parts, take a large spoon and gently scrape out the sides of your"basket".
  • Be care not to scrape too thinly on the handle, as you want it to have some stability, even though you will never try to carry it this way.
  • Mix the watermelon balls (or pieces, if you don't have a melon baller) with other ripe fresh fruits.
  • To make the handle garnish, thinly slice lemons, limes or oranges and use a toothpick to affix them, along with a grape, melon ball or cherry, to the watermelon.
  • Keep any extra fruit in a ziplock back and refill as it goes down!

Where I come from a fruit salad is fresh fruit cut up and mixed in a bowl with some colorful berries. When I moved west I had to plan a buffet so I decided to carve a watermelon and asked some of my volunteers to make fruit salad so I could continue filling the watermelon basket with fruit throughout the evening. Well, I got everything but what I thought! I got jello molds, towering quivering things with berries and cool whip all over them; I got a berry and mayonaise and brown sugar concoction, and absolutely nothing I could fill my watermelon with. One of the gals said I should have asked for fresh fruit cut up and on a plate. duh. Now I know. Honestly, I never saw such amazing creations. They were all eaten up and once the watermelon balls were gone I just tossed my carved melon. Wah....

Steps:

  • Wash and dry all the fruit.
  • With a large veggie peeler/melon carver cut the top third of the watermelon off making a decorative edge of either scallops or peaks. (I wish I had premium so I could post pix). When I was a kid I drew my decorative edge on the melon and carved it with a boning knife but it is faster and easier if you get a tool designed for carving. Scoop the melon out with a small cookie scoop and set aside.
  • Cut the cantaloupe into 8ths and cut the rind off. With the french fry blade of your food processor, shred the cantaloupe and set aside. I learned this from Greg Patton host of Pattonly Cooking sponsored by Cuisinart.
  • Cut the honeydew in half and seed it. With a melon baller make itty bitty balls and set aside. You can cheat and slice this in your food processer on the thickest blade.
  • Cut the pineapple into 8ths and core it. Cut into chunks and set aside.
  • Mix melons and pineapples together in a large bowl.
  • Quarter the strawberries and mix with the remaining berries and grapes. Do not mix in the raspberries or they will be pulverized.
  • Layer the fruits in the watermelon basket, first a layer of the melons and pineapple, then the berries then some raspberries. Save most of the raspberries for the top layer. Continue layering until your melon basket is full and save the remaining fruit in a baggie so you can re-fill the melon basket.
  • That's all there is to it! You can carve handles on your basket or leave it open which works better on a buffet as it is easier to access the fruit.
  • To make it extra fancy whip up an egg white and dip clusters of grapes in it, then roll in superfine sugar and let dry on waxed paper. Secure the little grape clusters in the edging of the melon basket with a toothpick. I did this for my mother once when she had her lady friends over and it really wowed them as a centerpiece.
