THE BEST DEVILED EGGS
Our classic deviled eggs get their kick from mustard and hot sauce. We like the simplicity of the flavor - it's the perfect recipe to use your imagination and add your favorite toppings or mix-ins.

- Place the eggs in a single layer in a wide saucepan, cover with 1 inch of water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely, then carefully peel them.
- Dip a clean kitchen towel in a small bowl of warm water. Wipe the blade of your knife with the towel to warm it up and to wet the blade. Slice the eggs in half lengthwise, one at a time, wiping the blade clean between each egg. (The warm, wet blade will give you clean cuts.) Remove the yolks to a medium bowl. Mash the yolks with a whisk. Add the mayonnaise, mustard, hot sauce if using and salt and pepper to taste. Whisk until very smooth. Transfer to a large resealable plastic bag or disposable pastry bag and snip off one corner with scissors.
- Place the egg whites on a platter. Pipe the filling evenly into the egg whites. Top with chives and a sprinkle of paprika. Refrigerate for 20 to 25 minutes prior to serving.

Steps:
- Slice eggs in half the long way and scoop out yolks into bowl.
- Beat yolks with mixer on low speed to crumble into tiny pieces OR for best results use a potato ricer and rice the yolks. Makes a smoother filling.
- With a spoon mix in remaining ingredients and spoon or pipe into depression in egg white halves. Want a fluffier filling? Beat with a mixer.
- Garnish with salt and pepper and a sprinkle of paprika if you like. A sprinkle or leaf of parsley looks nice too.
- Serve cold.

Steps:
- Place 6 eggs upside-down (smallest tip down) in the fridge for at least 6 hours this is to center the egg yolk.
- Then boil the eggs for at least 12 minutes or until hard boiled. Remove the shells and slice the eggs in half beginning at the smallest tip.
- Now separate the yolks from the whites; set the eggwhite halves aside on a serving plate and place the yolks in a bow.
- Mash the yolks, smoothing all lumps while adding the following ingredients: plenty of Mayonnaise, a pinch of salt, then black pepper, mustard, and Worcestershire sauce to taste.
- Combine the last ingredients carefully without making the mix too salty.
- When ready insert the yellow purée in a piping bag, and fill the eggwhite halves.
- Garnish with parsley or a sliced olive.

I found this in a Tapas cookbook I have. A twist on deviled eggs and very delicious. Easy to double or half the recipe.

Steps:
- Hardboil the eggs. Put eggs in a pan, cover with cold water, bring to a boil. Reduce heat to low, cover and simmer for 10 minutes. Drain and run eggs under cold water. Let eggs cool.
- Crack the eggs and remove the shells. Cut the eggs in half and carefully remove the yolks. Rub the yolks through a strainer into a medium-sized bowl.
- Add the rest of the ingredients to the eggs and mix well.
- Fill each egg white with the yolk mixture.
- Using the reserved pimentos and olives, add one of each to top of every egg as decoration.
- Dust with paprika.

- Peel shells off cooled hard-boiled eggs; slice into halves lengthwise.
- Remove yolks from whites and place in a small round bowl.
- Mash yolks with a fork into fine pieces.
- Add 2 heaping tablespoons Mayonnaise, yellow mustard, diced gherkins and finely chopped jalapeno (seeds removed), and salt and black pepper to taste.
- Stir mixture until creamy.
- Spoon mixture into a zip-lock sandwich bag; seal bag and snip off one corner of the bag.
- Squeeze mixture out of corner of bag into egg white halves.
- Sprinkle tops of filled deviled eggs with paprika.

Steps:
- Hardboil and shell the eggs. Cut the eggs in half (I keep a paper towel around to wipe the yolk off of the knife between cuts to make cutting easier). Place the yolks in a bowl and set the whites aside.
- Finely mince the shallot(s).
- Using a fork, crush the yolks until they are fine.
- Combine the yolks, shallot, mayonnaise, mustard, vinegar, salt and pepper and stir until smooth. I add the ingredients a little bit at a time and periodically taste to get the flavor to where I want it.
- Place the yolk mixture in a Ziplock bag. Cut a corner off the bag and pipe the yolk mixture onto the egg whites.
- Sprinkle with paprika and serve.

I made this recipe up myself and have perfected it over the years. I've taken these to church potlucks and have beaten out sweet grandmas with the hushed compliments I've received. HOW TO MAKE AWESOME DEVILED EGGS
You would think an appetizer like deviled eggs that has only two main ingredients would be simple to make. I mean come on how can you make deviled eggs the wrong way? You boil some eggs, cut them in half and mix the yolks with mayo or Miracle Whip. How hard is that? Well it's not really hard at all but there are some things you can do to make your deviled eggs shine like no one else's.

- To boil an egg correctly place your eggs in a pot. Make sure there is room for the eggs to move around as they boil so they don't crack. Fill with water so the water is an inch or more over the eggs. Bring to a boil. Allow eggs to boil only for 2 to 3 minutes. Turn the heat off, put a lid on the pot and move the pot off of the hot burner. Allow eggs to sit in the hot water for about 15 minutes. The hot water will continue to cook the eggs and you will have lovely mustard yellow yolks. After fifteen minutes rinse with cold water and peel.
- FYI if your shell sticks to the egg membrane your eggs are too fresh. This is not caused from over cooking your eggs. Buy your eggs a few days in advance of hard boiling them.
- Cut your hard boiled eggs in half with a sharp knife. Put the whites on a plate or in a deviled eggs dish. Put the yolks in the bowl of a food processor. Once you've got all the yolks in the processor pulse the yolks for about a minute. Add the rest of the ingredients into the food processor bowl and turn it on low and let it mix for about 1 1/2 minutes. Scrap down the bowl and pulse it a couple more times.
- That's it! Your filling is done and there shouldn't be any lumps of egg yolk. You can slide the bowl of a spoon across the top of the filling to check for lumps. Believe me you will see them if they are there. If there are lumps run your processor for another minute.
- Filling your egg whites can be done simply by spooning the filling in with a teaspoon or you can get fancy like I did today and put all the filling in a piping bag with a star tip. It's a little more work to use the piping bag but the deviled eggs look so pretty when they are filled this way. When I want to get fancy I use the bag and tip otherwise I will just use a spoon. My husband inhales them so quickly I usually just use the bag for the holidays.
- You can sprinkle some paprika on top to make them look prettier. My husband is picky about his deviled eggs and he doesn't like the paprika so I never use it.
